Mineral water is a valuable underground mineral resources, generally produced in underground rock, underground emission from natural or artificial to expose the deep circulation of groundwater, and the chemical composition of water salinity, for the characteristics of the water is mineral water. At present, with the implementation of China’s reform and opening up, people’s knowledge of nutrition and living standards are improving, the vigorous development of tourism, the consumption structure is changing. We can see, China’s bottled mineral water production and consumption will have greater development.Studies the application of HACCP system in mineral water production and processing, establishing HACCP system of bottle mineral water processing and the implementation and effectiveness tracking research, obtained the following conclusions:(1) Through the process, the mineral processing hazard analysis, determined critical control points CCP1is water, CCP2is pipeline disinfection sterilization, CCP3ozone disinfection sterilization,CCP4bottle and cap sterilizing,CCP5filling environment.(2) Through the three mineral water Wells of water quality survey, found that physical and chemical indicators of water quality qualified, but some high microbial indicator, escherichia coli, respectively is27MPN/100ml、18MPN/100mL、39MPN/100mL, more than the national standard.(3) Test the ozone concentration was discussed, the time, going into the ozone water for water sterilization effect, percent of pass is index of mineral water, optimized through the orthogonal experiment method, to determine the ozone sterilization sterilization effect best combination is:ozone concentration is0.6mg/L, ozone bubbled into the time of12min, water flow is4500L/h.(4) Test the concentration of chlorine dioxide was discussed, the sterilization time, water temperature on the bottle and cap sterilizing effect, with the removal rate of total number of colonies and free residual chlorine as index, orthogonal test method was optimized and the best condition of chlorine dioxide on the bottle and cap sterilization:chlorine dioxide concentration is2.5mg/L, sterilization time for30min, the water temperature is20℃.(5) On the stability of the final product quality tracking, randomly selected10products, after a week, a month after the monitoring, the qualified rate reached100%(6) Through the contrast test before and after the implementation of the HACCP quality, found that after the implementation of HACCP, the product of the total number of colonies from100cfu/mL has been reduced to less than10cfu/mL, escherichia coli, pseudomonas aeruginosa is not checked out.This study through the HACCP system in the mineral water production and processing to control the quality of products, improve the quality of the product and security, for HACCP in the mineral water industry development provides a strong basis, opens a new route for the quality control of mineral water.
