Abstract:Cigarette flavor is one of the most important raw materials of cigarette production, and an important factor constituting the cigarette brand style. The formula of cigarette flavor is core technology of the tobacco industry. Cigarette flavor are often added into tobacco products in order to achieve unique characteristics and coordination effect. Many different grades and types of tobacco aroma could be coordinated together by cigarette flavor. Now, the flavor formula is the most important factor for quality and character of cigarette, while tobacco flavor consisted of many natural and synthetic perfumes. So the research on the chemical components of natural perfumes and tobacco flavor may contribute to the analysis of flavor compositions and quality control of tobacco flavor.A key problem of the essence formula analysis is to identify one or more complex systems (essential oils, absolute oils, extracts, tinctures, etc.) in another complex system (essence). In order to solve this problem, we use gas chromatography/mass spectrometry technology for separating and analysing the cigarette flavor. A software named "tobacco flavor chemical component analysis and computer-aided perfume system" was developed based on some chemometric methods, such as fingerprint spectrum technology, heuristic evolving latent projection resolution and moving window orthogonal projection resolution.In chapter one, the classification of the tobacco flavors and the comparison of the extraction methods fortobacco flavor was reviewed. And then, chemometric methods commonly used in the analyses of flavors and fragrances were summarized.In chapter two, the main module and function of "computer-aided flavor-adjusting software"were introduced firstly. And then, the purpose of building, methods and contents of a database for fragrance quantitative description was described in detail.In chapter three, chemical composition of complex flavor formula was analyzed by means of GC-MS. The chemical constitution and note of essence were analyzed by "computer-aided flavor-adjusting system". The results show that the essence contains14isolates and2essential oils. In order to judge whether the essential oils were really in the essence rather than the combination of some isolated flavors, the generalized standard addition method was applied. A database for fragrance quantitative description was also used in analyzing essence formula, and combined with the indicators such as smell and note of the main componts.In chapter four, based on a tobacco flavor analysis, the composition of essence was obtained and the flavor investigate was further refined under the experience of flavorist. The simulated flavor was evaluated from the chemical composition and odor characteristics. Results showed that the similarity of chromatography fingerprint between original and simulated flavor is up to97.8%. After the evaluation from a professional team formed by flavorist, the smell characteristic is very similar to the original flavor. This work provided a new method for flavor analysis.
