Grape is one of the world’s four main kinds of fruit, with high nutritional value, and its economic benefit is good. Since the reform and open policy, the grape industry of our country is developing very rapidly, but mainly of table grapes cultivated. At present grape planting and processing has become the main way to promote economic development and increasing the famers’ income. Chongqing area started to develop the table grapes production in the mid1980s. Especially in recent years, grape cultivation area and yield show clear ascendant trend. But because of the time of light is short in Chongqing, and with much rain in the grape growing season, Grape is growing bad. So choosing good fresh grape variety is particularly important. The Kyoho is a kind of grape varieties with good quality; rich in nutrition and the biggest fruit grain, its promotion and grow greatly promoted the development of grape industry in southern China with much rain. The experiment chooses the four table grapes in Chongqing to research, from fruit quality, procyanidins content and so on, in order to understand their ecological adaptability in Chongqing, for the choice of breed to provide the theory basis. The conclusions are as follows:In the fruit, the comprehensive analysis of taste show that Muscat Kyoho is best performance, followed by summer black and Kyoho, the overall flavor of Emily is the worst. The Muscat Kyoho is better in grain appearance, close degree, shape, flavor and delicious expression; Kyoho is better in the fruit color, appearance and close degree; Summer black do well in colour and luster, Grain shape, Peel and pulp close degrees, flavor and delicious expression; the performance of Emily is better only in the Grain close degree and the evenness of Fruit grain.According to the physical and chemical properties analysis, Sugar content of Kyoho is the highest, Muscat Kyoho is minimum; Total acid content of Emily is the highest, Muscat Kyoho is minimum; vitamin C content of Summer black is the highest, Emily is minimum; Soluble solids content of summer black is supreme, Kyoho is minimum. Muscat Kyoho has a unique smell of roses.Procyanidins content determination results of the four varieties show that their procyanidins content is significant difference; procyanidins content of the different parts of the same varieties is also significantly different. Overall, the procyanidins content of peel and juice is:Muscat Kyoho> summer black>Kyoho>Emily, the procyanidins content of seed is:Muscat Kyoho> Kyoho> Emily, summer black is non-nuclear varieties. The procyanidins content of different parts of the same breed is:seed>Peel>pulp. Grapes for wine process, procyanidins content, chrome, acidity value increase slowly in the first five days, increasing rapidly in the5to15days, but the increase rate slowed in the15to20days, after20-25days each index basic remain unchanged. It is show that Wine fermentation time is about three weeks or so. The procyanidins content of Wine is: Muscat Kyoho> summer black> Kyoho> Emily, the acidity of wine is:Muscat Kyoho> Kyoho> summer black> Emily, and acidity value ranges from3.3to4.0. The chromo value of Wine is Muscat Kyoho> summer black>Kyoho>Emily. After the correlation analysis, the procyanidins content of fruit and wine and quality indicators are closely related. So we can comprehensive consideration of the varieties, production, quality, procyanidins content and so on, to manage the whole growth period of grapes.Combination of the result, in allusion to the viticulture of Chongqing area, we should combine the grape variety characteristics, local climatic conditions, market factors, and other comprehensive consideration, choosing suitable varieties, then comprehensive consideration of the varieties, production, quality, procyanidins content and so on, conducting the whole growth period of the grapes. At the same time different regions should choose different posture, planting density; Different species should select different clip way, water management, pest control measures, so as to achieve scientific and intensive production.
