Our country which has a wide variety of agricultural products is a large agriculturalcountry,and has great potential and advantage to develop the processing industry foragricultural products.Drying technology plays an important role in the process of theagricultural products processing,storage and transportation.The traditional dryingtechnology has large energy consumption,serious environment pollution.And the qualityof products which ware dryed by the traditional drying technology is poor.With thedevelopment of social economy and human life,the traditional drying has been unable tomeet the needs of modern social development.However,the application of microwavedrying has been paid much attention in many industries.Compared with the conventionaldrying technology,microwave drying technology has some advantages of high productionefficiency,low energy consumption and no environment pollution.At the same time,theproducts that are dryed by microwave drying are green pollution-free,and have plentifulnutrition.Therefore,this thesis is that microwace drying technology was introduced intothe dry field of agricultural product.And we studied the microwave drying technology ofthe lotus seed,chili and chive,then identified the optimal process parameters of lotusseed,chili and chive by using the data processing software of Excel and Spssto analysethe data of orthogonal experiment.Experimental results show the optimal microwavedrying technology of the agricultural products.The better quality of lotus seed wasobtained when microwave power was3000W,the loadage of lotus seed was1000g,thickness of lotus seed was35mm.The better quality of chili was obtained whenmicrowave power was2000W,the loadage of chili was900g, thickness of chili was50mm.The better quality of chive was obtained when microwave power was2000W,theloadage of chive was130g, thickness of chive was25mm.This study provided goodtheory evidences and reliable technical supports for the further research and productionapplication of microwave drying technology in the filed of agricultural productsprocessing.
