Zophobas atratus Fabricius belonging to Insecta, Coleoptera and Tenebrionidae is native to Central America and other regions. It came to be domesticated, and then has been one of the resources of the large-scale artificial breeding insects. In this paper, we further study the technical processing of Z. atratus larvae protein based on the analysis of its nutrients. We choose the suitable protease from six kinds of protease, study the influence factors of this protease activity, design and optimize the enzymolysis technology of Z. atratus larvae protein by this protease. To explore the physiological function of the enzymolysis products, we study the effects of the enzymolysis products on KM mouse’s body weight, physical strength and intelligence by feeding, to provide a reliable technical and theoretical support for the development and utilization of Z. atratus larvae protein. The main conclusions are as follows:1、The nutritional compositions, amino acid composition and quality evaluation of Z. atratus larvaeZ. atratus larvae’s protein accounted for22.28%of its fresh weight, higher than most of the food protein content, its protein contains20kinds of amino acid, contains8kinds of essential amino acids(EAA) the human body needs, the essential amino acid index(EAAI) as high as92. Its protein belongs to high quality source of protein.2、The enzymolysis technology of Z. atratus larvae proteinIn acidic protease, papain, neutral protease, alkaline protease, trypsin, pepsin and so on six kinds of protease, we choose the alkaline protease as experimental material, which has the strongest hydrolysis ability on the Z atratus larvae protein. After the test of enzymatic hydrolysis process optimization, We determine the optimum condition for the enzymolysis technology:Hydrolysis temperature is (59.5±0.5)℃, hydrolysis time is (3.2±0.4) h, initial pH value of9.3±0.1, the substrate concentration (6.7±0.2)%,(3.7±0.2)%ratio of enzyme and substrate.3、The effect of Z. atratus larvae protein enzymolysis products on KM mouse’s body weight by feedingWe measure KM mouse’s body weight before and after we feed with different doses of Z. atratus larvae protein enzymolysis products, within the dose scope of the test using, the results show that the feeding dosage of enzymolysis products is positively associated with the degree of weight gain.4、The effect of Z. atratus larvae protein enzymolysis products on KM mouse’s physical strength by feedingWe use the pole test and weight loading swimming test in KM mouse which is fed with different doses of enzymolysis products to test the anti-fatigue ability of them. The results show that, KM mouse fed with medium dose of enzymolysis products(1.67g/kg bw·d) show the significant higher scores in the pole test and weight loading swimming test than other treatments, and the KM mouse which is fed with enzymolysis products show the significant higher scores in the pole test and weight loading swimming test than those which are not fed with enzymolysis products. Result shows that the enzymolysis products have a certain ability to resist fatigue for KM mouse.5、The effect of Z. atratus larvae protein enzymolysis products on KM mouse’s intelligence by feedingWe use the Morris water maze in KM mice which are fed with different doses of enzymolysis products to test those learning and memory abilities of spatial orientation. The results show that, KM mouse fed with medium dose of enzymolysis products(1.67g/kg bw·d) show the significant higher scores in the Morris water maze test than other treatments, and the KM mouse which is fed with enzymolysis products show the significant higher scores in the Morris water maze test than those which are not fed with enzymolysis products. Result shows that the enzymolysis products have a certain ability to enhance the KM mouse’s intelligence.
