Edible mushrooms have many healthcare functions, such as anti-cancer, lowering bloodpressure and glucose, regulating metabolism. Pholiota nameko cultivated in China isconsidered as one of the seven species and currently has become the largest production ofedible mushrooms in northeast China. Developing deep processing products of Pholiotanameko has become an important topic in industry of Pholiota nameko. The antioxidation andimmunoregulation of Pholiota nameko were studied in this paper, to provide the scientificfoundation for deep processing products of Pholiota nameko.Ethanol and water crude extracts from Pholiota nameko were investigated for theirantioxidant capacity in five different assays, namely, DPPH radical scavenging activity,superoxide anion radical scavenging activity, hydroxyl free radicals scavenging activity,antioxidant activity against lipid peroxidation and reducing power. The results indicated thatall the extracts showed potent radical scavenging activity in each assay. Furthermore, theantioxidant capacity and the inhibition value increased with concentration.Water extracts were prepared from Pholiota nameko which were vacuum freeze-dried. Acomparative study of antioxidant activity in vitro and immunological enhancement in mice ofthe water extracts and powder was performed. It described the effects of water extracts andpowder on the SOD vigor in the mouse blood serum, the MDA content in the liverorganization, immune organs index, DTH, hemolysis void spot several and half hemolysisvalue. The results showed water extracts could obviously enhance the SOD vigor in themouse blood serum and also could decrease the MDA content in the liver organization,promote the spleen indices and the formation of hemolysis void the transformation of spleencells, differently from powder. Although water extracts could promote the thymus indices,there was no remarkable difference in all groups. The serum hemolysin formation wasperformed by HC50assay, but statistically insignificant.In conclusion,ethanol and water crude extracts from Pholiota nameko had goodantioxidant capacity. The water extracts had antioxidant activity in vitro andimmunoregulation.
