With the increase of social pressure and acceleration of life rhythm, people are liable to fatigue with subsequent syndroms. Thus functional food, which is capable of providing additional physiological benefit and relieving fatigue, becomes social requirement, leading to the fact that more and more food with anti-fatigue activities appears. In this research, chewable tablets with refreshing characteristics were prepared using modern biotechnology and food technology, which were mainly composed of ginsenoside, tea polyphenols and probiotics.The optimal ethanol concentrations, extracting time, extracting temperature and the ritio of ginseng to ethanol have been determined by single factor experiment. We also o ptimized the conditions for ginsenoside extraction as follows:70%ethanol,25min,60℃and the ratio for ginseng and ethanol at1:12. The extraction rate ginsenoside get up to7.46%.This research optimized the conditions for microencapsulation of Lactobacillus plantarum and Bacillus coagulans into soy protein isolate (SPI)-based microcapsules as follows:9%SPI (w/v), pH9, agitation rate at700rpm and the ratio for probiotics liquid and soy protein at1:3(v/v). The embedded rate reached74.12%. The capsules showed good enteric solubility and could tolerate the acidic environments in stomach.The Response surface technique was used to screen the optimum formula of freeze-drying protectant. The optimizeds protectant is composed of10.43%skimmed milk,8.91%sucrose, and0.23%MnSO4, and the survival rate of bacteria is83.36%.The orthogonal experiment was used to screen the optimum formula of chewable tablets for brain cool as follows:15%ginsenoside,10%tea polyphenols,5%freeze-drying powder of probiotics in soy protein capsules,54.5%skimmed milk,15%xylitol,0.2%flavoring and0.3%magnesium stearate. The tablets thus prepared showed glossy surface, moderate hardness and good taste. After the mice taking the chewable tablets at suitable dose for brain cool, prolonged burden swimming time was found, and the chewable tablets can lower the concentrations of blood lactate, elevate the hepatic glycogen concentrtion. These results suggest that chewable tablets for refreshing can help the body resist fatigue. This tudy may pave a way for broadening the research into function food with anti-fatigue features.
