Oyster is well known for its delicious meat and its high nutritional value, it is prolific and abundant in resources, and it occupies a considerable important position. As one of edible and pharmaceutical product admitted by China’s Ministry of Health, oyster is rich in nutrients glycogen, protein, amino acids, fats, vitamins, trace elements. Studies show that oyster has physiological activity, such as anti-tumor, hypolipidemic effect, hypoglycemic activity, boosting up immunity capability, anti-fatigue effect. Currently oyster products are mostly still in the initial stage of processing, the further processing of oyster is still very few. In order to make full use of oyster resources and meet the need of the life in modern society, new products is imminent. This research has studied the anti-fatigue effect of protein hydrolysates from oyster, and enhanced the anti-fatigue effect by Acanthopanax extracts. Ultimately a kind of anti-fatigue chewable tablet is made by optimizing formulations, which is made from protein hydrolysates from oyster and Acanthopanax extracts. Finally the chewable tablet’s physical and chemical properties, microbiological criteria, the active ingredient content were analyzed. The main research results are as follows:1. Oyster protein hydrolysates’ s anti-fatigue effect was studied by exhaustive swimming test in mice, it showed that the middle dose group has prefer anti-fatigue effect, compared with low dose and high dose group. The swimming time of mice prolongation 39.7%(p<0.01) than the negative control group, the content of the original glycogen extended137.4%(p <0.01), who chronically administered oyster protein hydrolysates dosage 1.3g /(kg ? d). One sport indicator and one biochemical indicator are positive.2.To add Acanthopanax extracts into oyster protein hydrolysates to enhanced anti-fatigue effect, the results showed that swimming time index(p <0.05), liver glycogen content index(p <0.05) and blood lactic acid content index(p <0.01)were positive, indicated that oyster protein hydrolysates was anti-fatigue. While add Acanthopanax extracts into oyster protein hydrolysates, three biochemical indexes(p <0.01)and one sport index(p<0.01) of middle dose of Acanthopanax extracts(0.70 g/kg)were positive, it showed that add the middle dose of Acanthopanax extracts into oyster protein hydrolysates has the stronger ability of anti-fatigue. It concluded that middle-dose Acanthopanax extracts could improve the anti-fatigue activity of protein hydrolysates from oyster.3.Seting the target of hardness and sensory evaluation, it gained the optimal chewable tablet formulation by D- optimal mixture design. The optimal chewable tablet formulation is: 5.14% main ingredient(oyster protein hydrolysates: Acanthopanax extracts= 73: 27),4.76% sugar, 37.71% lactose, 19.05% mannitol, 28.57% microcrystalline cellulose,0.48% citric acid, 0.48% magnesium stearate, 3.81% hydroxypropyl methyl cellulose.4.In the HPLC method detect the active ingredient content of chewable tablets were143 mg / kg taurine, 15 mg / kg Eleutherosides B content and 50 mg / kg Eleutherosides E content.
