In recent years, the study of apple polyphenols are a hot topic at home and abroad, apple polyphenol product has great development space and multiple effects. In order to making full use of unripe apple, taking unripe apple as the research material, unripe apple is used as raw material mianly to establish the method of extraction and separation apple polyphenols, the process of apple polyphenol mouthwash, with dimethyl sulfide and hydrogen sulfide deodorization object, research on apple polyphenol mouthwash deodorization effects. This thesis could contribute to developing oral cavity cleaning products based on apple polyphenols.In this paper we studied several aspects as follows:The optimal reaction conditions of Folin-Ciocalteu colorimetry for the determination of total polyphenols in apple was vestigated.The results indicated that the optimum conditions for total polyphenols determination by Folin-Ciocalteu were as follows: 5mL of 10% Folin-Ciocalteu reagent was added in 1.0 mL of sample, and then 4.0m L of 7.5% sodium carbonate solution was added, after the coloration reaction under normal temperature for 60 min, the absorbancy was measured at 765 nm. Under the optimum conditions, the mass concentration of polyphenols in the range of 0~5μg/mL had a good linear relationship between absorbance(Y=0.0124X+0.0146, with the correlation coefficient of 0.998).Taking unripe apple as the research material, the ultrasonic extraction is better than microwave extraction. The optimum technological conditions of ultrasonic extraction were respectively 25 min of time length,55℃ of temperature,60% of the ethanol and 15 to 1 of the solvent-dissolved matter ratio, and the ratio of extraction was 8.985g/kg.Using AB-8 macroporous resin purification apple polyphenols, the dynamic tests showed that: apple polyphenols crude solution 40%, sample volume 60 mL, the optimal flow rate of adsorption was 1mL/min. The optimal desorptions conditions were ethanol concentration 80%, eluent amount 100 mL.The total polyphenols yield reached 87.27%.The processing of apple polyphenol mouthwash was studied, mouthwash contain of 10mg/mL apple polyphenol, apple polyphenol mouthwash were composed of 10% polyphenols concentrated solution, 10% glycerin and 80% pure water. We used GC-MS to measure the deodorizing effects of dimethyl sulfide, hydrogen sulfide odor components of apple polyphenols. The deodorant rate of it on dimethyl sulfide was 28.21% and hydrogen sulfide was 17.82%, deodorization time 1min.
