Lentinula edodes cultivation has a long history in our country,is also one of the main products in our country. It not only has rich nutritions and good taste, but also has the function of enhancing human immunity and anti-cancer, that is favorited by the consumer. But its shelf life is short, tendency to turn brown and spoilage after harvest, which have restricted the development of Lentinus edodes industry. Nowadays plant essential oils have showed better preservation effect. But the plant essential oils used in postharvest of Lentinula edodes has not been reported.To isolate and identify the rot-causing pathogens during postharvest storage of Lentinus edodes. Compared with 0.1% sodium metabisulfite, study the antifungi activity of cinnamon essential oil, thyme essential oil, clove essential oil, basil essential oil in vitro. study on the postharvest physiologieal and phytochemical changes of Lentinus edodes dealed with plant essential oils. The results were shown as follows:1 To isolate and identify the rot-causing pathogens during postharvest storage of Lentinus edodes. Two types of Lentinula edodes rot fungi were attained through the organizational separation and the Koch assumption, which were identified as Candida elateridarum with morphological and molecular biology methods.2 Compared with 0.1% sodium metabisulfite, cinnamon essential oil, thyme essential oil, basil essential oil and clove essential oil have consideration antifungal effect to two types of rot fungi. The result showed that the four kinds of plant essential oil and 0.1% sodium metabisulfite have different degrees of inhibition on the test strains. Cinnamon essential oil exhibited the best antifungal activities against the tested fungi, the inhibition zone diameter is 90mm and 39.56mm respectively; The second place was taken by thyme essential oil, the inhibition zone diameter is 40.43 mm and 16.64 mm respectively; The antifungal effect of basil essential oil and clove essential oil and 0.1% sodium metabisulfite is the worst.3 The minimal inhibitory concentration (MIC) of cinnamon essential oil, thyme essential oil, basil oil, clove oil and 0.1% sodium metabisulfite were further studied. Results showed that the MIC of cinnamon essential oil against Z1 and Z2 was 0.078 and 0.313%o respectively; the thyme essential oil, MIC was 0.625%o and 10%o respectively. So the antifungal effect of cinnamon essential oil is best, followed by thyme essential oil.4 The antifungal and preservative activitiesof 4 kinds of essential oils were investigated with four concentrations of 10μL/L,15μL/L,20μL/L and 25μL/L on Lentinula edodes under laboratory conditions. At the same time,compared plant essential oils with 0.1% sodium metabisulfite. Results showed that cinnamon essential oil and thyme essential oil can effectively reduce the decay index, delay the discoloration of Lentinula edodes, inhibit respiratory intensity of postharvest and peak appeared, reduce PPO activity and POD activity, and therefore, The treatment can extend the storage period.20μL/L cinnamon essential oil and 10μL/L thyme essential oil have showed better preservation effect.5 Study the changes of 20μL/L cinnamon essential oil and 10μL/L thyme essential oil to the quality of Lentinula edodes during storage, Results showed that 20μL/L cinnamon essential oil and 10μL/L thyme essential oil can keep nutritional quality very good. 10μL/L thyme essential oil is obvious reduce the loss of protein and total sugar in storage period,20μL/L cinnamon essential oil can delay the decline of reducing sugar and vitamin C content, and keep the vitamin C content in a relatively high level.
