In this paper, selecting ordinary oil-tea camellia seed and oil-tea camellia seed cake as testing materials,adopting reasonable and effective technical means such as extraction, isolation, identification, and combing with in vitro bacteriostasis experiment, the kinds of moulds in the process of storage and processing of oil-tea camellia seed and oil-tea camellia seed cake, especially the growth of aspergillus flavus, and different extracts of rate and its inhibitory effection on growth of aspergillus flavus and toxin-producing etc are discussed in the system, and has some exploratory research and analysis. The results were as follows:1. The separation of molds from ordinary oil-tea camellia seed and oil-tea camellia seed cake : According to the requirements of design of experiment, respectively taking a certain amount of oil-tea camellia seed, oil-tea camellia seed cake, storage at different times in different season, observe the growth situation of molds. Using the standard of GB4789.15-2010《The food hygiene microbiology test mold and yeast count》 dilution plate method for separation of the molds, Getting four different form molds. The result showed that there are four main molds: Aspergillus flavus, Aspergillus Niger, Mucor, Penicillium.2. Artificial inoculation of aspergillus growth research: Selection of ordinary oil-tea camellia seed, oil-tea camellia seed cake, peanut, soybean as four kinds of experimental materials,according to the requirements of design of experiment, artificial inoculate of aspergillus flavus, under the condition of the same training regularly geted samples detection of aflatoxin B1(AFB1) in each samples. The results showed that oil-tea camellia seed, oil-tea camellia seed cake and soy three kinds of experimental materials no detection of aflatoxin B1(AFB1), aflatoxin B1(AFB1) in peanut increasing trend, the highest detection value reaching to 14634.45μg/kg.3. The inhibition effect of crude extracts of oil-tea camellia seed and oil-tea camellia seed cake on aspergillus flavus : With different polarity of solvent, extraction of the natural active ingredients in oil-tea camellia seed and oil-tea camellia seed cake, to study the extraction yield,and the income effection of natural extracts to inhibited the growth of aspergillus flavus. The results were as follows:(1) The crude extraction of oil-tea camellia seed and oil-tea camellia seed cake by different polar solvent is completely different and significant differences. The crude extraction of tea seed by ether extraction had the highest rate, reaching to 57.74%; the crude extraction from tea seed by pure water extract was second, reaching to 38.90%; the crude extraction of oil-tea camellia seed by 80% ethanol was lower, reaching to 18.42%; the lowest was oil-tea camellia seed cake by ether, only 0.273%; the crude extraction of oil-tea camellia seed cake, whether in pure water extract, or with 80% ethanol extract, was around 22%.(2) The water extracts of oil-tea camellia seed and oil-tea camellia seed cake had good inhibition effect on the growth of aspergillus flavus, the rate reaching to 88.87% and 87.96%, the differences are not obvious, they all could be used to inhibit the growth of aspergillus flavus, the ether extract of oil-tea camellia seed also had certain inhibition effect on the growth of aspergillus flavus, the rate reaching to 61.11%; the ethanol extract and the ether extract of oil-tea camellia seed cake had no inhibition effect on the growth of aspergillus flavus.
