Bean spourts are abundant in nutritional value and health care functions,therefore it is favored by the vast number of consumers.But in recent years, "poisonous bean sprouts" events have been repeatedly exposed, bean sprouts quality and safety has caused widespread concern in the community.In order to grasp the quality and safety situation of market of Ya’an commercial bean sprouts, For Yucheng District of Ya’an city in four markets, two large supermarkets and homemade bean sprouts in the laboratory, the paper has studied and analysised. in order to find the factors that influence the quality of the safety Ya’an commercial bean sprouts,put forward the appropriate management measures, promote the healthy development of bean spouts industry, and improve the quality and safety of bean sprouts commercially available, so as to ensure the food safety of the vast number of consumers. According to the different geographical range vegetable market in batches of samples were collected from the master, and from the space and time to better grasp the quality and safety of Ya’an Yucheng District beansprouts. For the detection of heavy metals in bean sprouts, selection of the standard is issued by the quality and Technology Supervision Bureau of Sichuan Province provincial standard 《DB51 T 1061-2010 the bean sprouts》, pesticide residue detection of nitrite is the relevant standards promulgated by the Department of agriculture in china. Combined with laboratory conditions, local standards and related literatures are selected to detece hormone, the recovery of the latter detection rate is reached 80%-120%. This paper has done a lot of experiments, and then the data were analyzed and the results are as follows:1、The high-performance liquid chromatography method is usded to detect and analysis the pesticide residue hormone of bean sprouts, the results showed that 2,4-D of the bean sprouts is serious exceed the standard, exceed the standard rate of the first group and second group were 18.18% and 40.9% of the difference, respectively, indicating that unscrupulous traders frequently added growth regulators, and not quantitative. The detection rates of 6-BA and GA3 are finded, but do not appear to exceed the standard phenomenon. In the detection of thiabendazole in 22 samples, the results show that only one of samples are positive and exceed the standard, the qualified rate is 95.5%, which shows the bean sprouts producers are not commonly used fungicide thiabendazole.2、It is using the uv-vis spectrophotometry to purchase by nitrite test analysis, the experimental results show that the three batches are overweight, the percent of pass is 50%,55.55% and 79.58% respectively, which indicating Ya’an commercial bean sprouts have a great quality excessive nitrite security risks.3、It is using hydride atomic fluorescence spectrophotometry for bean sprouts to detect heavy metals (Plumbum, Mercury, Arsenic) in the analysis work, the sold bean sprouts element of lead in the second and the third batch of detection rate is as high as 100%, and the first percent of pass is only 41.91%,.The first batch of bean sprouts issued by a laboratory dedicated bean sprouts hair, its Pb content is exceeded, the rest of the test are not overweight, the second batch of sprouts are ordinary soybean of market, the test results is not exceeded, which suggesting that the quality of the hair for bean sprouts beans, and it urgently needs attention. For analysis of elemental Mercury in bean sprouts, percent of pass is 100%. For Arsenic detection, the detection rate of three batches are 22.73%,13.64% and 22.73% respectively, but they are not overweight.4、This paper explores the possible existence of bean sprouts production process security risks and control measures, such as:the amount of growth regulators need to regulate and control, excessive nitrite problems should be paid more attention, safety and quality of bean sprouts may be indirect effects by soybean, the focus of heavy metal pollution should be controlled at the source of production of bean sprouts and so on. So that it can provide a basis for safety and quality standards for the quality supervision departments detection of bean sprouts.
