With the development of society and the improvement of people’s living standards, there is more demand for food safety. Therefore, it is very important to enhance the risk analysis of food safety in China for improving and prompting management of food safety, reducing the incidence of food safety related event improving the quality of life of people. Relying on the gradual maturity of the data warehousing technology, OLAP online analysis and data mining technology has become an effective solution to the above demands on the base of effective combination and analysis of relevant historical data with producing a direct report.Using OLAP-line analysis and C4.5 algorithm data mining techniques design a food safety risk analysis scheme. This thesis analyzes the current situation of food safety management research. And determines food safety incidents relating to risk analysis, multi-size structure, star structure of model on base of data warehouse, OLAP-line analysis and data mining technology. Thesis does food sa fety incident data ETL preprocessing and sets up the establishment of a food sa fety risk analysis cubes in SQL Server as the data processing and analysis platf orm. According to accident risk analysis of food safety body, the thesis does pr ocessing and analysis cube and data Mining using C4.5 algorithm. The thesis a nalyzes the implication of food law issues of data and accesses to the informati on related to food safety risk analysis decisions.
