Modern scientific research shows that red jujube has high nutrition health care value.Edible effervescent tablets become a new thing in the field of food. The combination of red jujube and effervescent tablets is a kind of beneficial attempt and is also an effective solution to solve the dilemma of jujube development in northern shaanxi.In this study, the Yanchuan Goutou red jujube was used as raw material and red jujube effervescent tablets manufacture process was optimized. The main research contents and results are as follows:(1). The key factors of rehydration and alkali peeling were optimized. Results showed that dried dates was mixed with 60°C water for 6 h, then with 60°C 5.5% Na OH solution for3.5 min, and finally rinsed with water. The peeling efficiency was satisfactory.(2). The key factors of drying and color-preserving were optimized. The core of dried dates was removed and freezed in the fridge. After freezing, jujube was cut into 2-6 mm thick slices. The jujube slice was soaked at room temperature with 0.4% citric acid solution for 5min, and dried by air blower at 60°C for 3-4 h. Little browning of Jujube slices was observed,and the quality of Jujube slices could meet the need of production.(3). The key factors of jujube powder production were optimized. Dried dates were mixed with SO2 anticaking agent(1.0%) and crushed more than 60 s. Jujube powder of 120 mu was obtained by sifting. It was suitable for the preparation of red dates drink effervescent tablets.(4). The ingredient of red jujube drink effervescent tablets was optimized. Results showed that a better proportion of red jujube drink effervescent tablets include 60% red jujube powder + 8% red jujube extract + 1.6% protein sugar + 0.4% vitamin C + 15% Na HCO3 +13% citric acid + 2% polyethylene glycol(peg) 6000. The mixed powder was tableted directly and the red jujube drink effervescent tablets were obtained, the effervescent efficiency was good by adding 10 g of tablets into 200 m L of cold water. The final beverage with tan color and strong jujube aroma, tastes sweet and delicious.
