Momordica charantia L.tastes sweet and bitter,it is rich in nutrition,it is mainly eaten as a vegetable,and has high medical value at the same time.The active substances of M.charantia L.include saponins,polysaccharides and phenols,which have the functions of reducing blood sugar,anti-oxidation,anti-inflammation,anti-cancer,bacteriostasis,enhancing immunity and so on.In this study,balsam pear compound effervescent tablets was developed based on the function of M.charantia L.,which can assist in hypoglycemic,antioxidant,weight loss and fat reduction.This product has the advantages of small size,fast dissolution and multi-efficacy,and has a broad market prospect.In this paper,the processing technology research,quality standard research,stability investigation and functional evaluation of the effervescent tablets were carried out,including:1.The dried M.charantia L.slices were extracted by ethanol,and the M.charantia L.extract was prepared by concentration,drying,grinding and sieving.thin layer chromatography showed that the main component of the extract was saponins.The inhibitory rate of M.charantia L.extract on?-glucosidase and?-amylase was studied.The IC50 values were 1.90 mg/m L and 1.86 mg/m L,so the extract had certain hypoglycemic ability.2.The resting angle,moisture absorption percentage,tablet hardness and brittlen ess were measured,and maltodextrin was selected as the filling agent of effervescent tablets.The acid-base ratio of the selected formula for the determination of CO2r elease and disintegration time is 1.35purl.The screening and quantification of lubricants and sweeteners were completed according to the situation of tablet pressing,the appearance of tablets and sensory evaluation.The amount of PEG 6000,added to the lubricant is 5%.The sweetener was mixed with sucralose and aspartame at 3:2.Through the response surface experiment to optimize the addition amount of blueberry extract,sweetener and disintegrant in the formula,it is determined that the addition amount is 9%,2%and 53%respectively.After verification and analysis,the experimental results are reasonable.Through the analysis of the sour,sweet,bitter and aftertaste of effervescent tablets by electronic tongue,it was proved that the taste of balsam pear compound effervescent tablets was richer than that of balsam pear and blueberry extract,and the sour and sweet taste were significantly improved,while the bitter and astringent taste decreased obviously.has a better overall taste.3.The quality standard of balsam pear composite effervescent tablets was studied.the results showed that the product was dark purple in appearance,slightly bitter in smell,no fracture,deformation and impurity pollution,the average sheet weight was 0.995g,the weight difference was within-4.32%min,3.78%,the average hardness was 112.44 N,the weight loss rate of brittleness test was 0.61%,the average disintegration time was 4.151 min,the average p H value was 4.962 after dissolution.The sour taste is moderate,the average angle of rest is 32.866°,and all the tests meet the requirements of the standard.The content of saponins in balsam pear compound effervescent tablets was 1.88974 mg/tablets,and the microbiological test results of balsam pear effervescent tablets were qualified.The results of stability investigation showed that the effervescent tablets sample had good stability in the environment of high temperature and strong light,and the determination results of each index were within the qualified range,but the stability was poor in the environment of high humidity,and all the conventional indexes changed greatly.therefore,the production process of balsam pear compound effervescent tablets should strictly control the environmental humidity.4.The in vitro experiment showed that balsam pear compound effervescent tablets had good scavenging effect on DPPH and ABTS+ˇfree radicals.The Vc equivalent measured by PSC method is 5.11 mg/ml,which is still different from that of Vc.The weight-reducing effect of balsam pear combined with effervescent tablets group was significantly lower than that of the model group after 6 weeks,and there was no significant difference in drinking water and food intake.Therefore,the weight-reducing effect of balsam pear combined with effervescent tablets does not depend on the control of appetite.In addition,balsam pear combined with effervescent tablets significantly reduced the body fat of mice fed with high-fat diet,improved the phenomenon of fat deposition in the liver,made the liver show a crimson healthy state,and showed a good lipid-lowering effect.
