Rhamnus davurica pulp is exquisite, it’s colour and luster inviting, contain santhocyanins, polyphenols, sugar, protein, vitamins and other nutrients, It has the bioactive function and medicinal value.(Rhamnus davurica is a small-sized berry which has both bioactive and medicinal value. It contains many nutrients including sugar, protein, vitamins, minerals, anthocyanins and polyphenols.) In this study, Rhamnus davurica from area of Changbai Mountain is used to process into fruit juice beverage by using it as raw material, providing material for the development and utilization of Rhamnus davurica Pall in the wild, so as to obtain higher economic benefit and social benefit.This topic research results were as follows:1.Rhamnus davurica Pall fruit had moisture content 83.86%, soluble solids content was 16%, total sugar content 10.3%, total acid content 0.83%, protein content was 0.41%, Vc content was 36 mg/100 g, tannin content was 214.129 mg/kg, polyphenol content 158 mg/100 g, anthocyanins content 115 mg/100 g,emodin content was26 mg/100g、chrysophanol content was 63 mg/100 g.2.The optimal enzymatic hydrolysis conditions of Rhamnus davurica Pall fruit pulp was: the pectin enzyme dosage 0.25%, the enzymolysis temperature 55℃, enzymolysis time3 h.3.Chitosan clarification method is the best way to clarify the Rhamnus davurica pulp juice, clarifying conditions are: chitosan concentration was 0.7g/L, flocculation temperature was 58℃, flocculation time was 1.5h, under these conditions, the light transmittance could reach92.2%.4.The best formula of clear Rhamnus davurica Pall juice beverage was A2B2C2, namely, Rhamnus davurica Pall juice content was 20%, total sugar content was 13%, total acid content was 0.15%.5.The best sterilization process of Rhamnus davurica Pall juice was: 100℃for 10 min.Under the condition of sterilization, the finished product is purple red and fruity, with soft smell and ransparent juice.6.The clear Rhamnus davurica Pall juice beverage had soluble solids 15.3Brix,total sugar concentration13%, total acid concentration0.12%, pH4.5, transmittance could reach94.8%, had Rhamnus davurica Pall aromas, purple red, clear transparent, is a kind of high quality beverage.
