Advances in science and technology as well as a growing economy has brought global information network and global market. Supply chain is a further development of modern logistics, which is a more advanced and comprehensive organizational model.The supply chain of horizontal integration to form a chain, from suppliers to manufacturers to distributors, throughout all enterprises, and enterprises between neighboring nodes is a demand and supply relationship. Supply chain information flow is the flow of goods and trade information, the direction is two-way flow between the supplier and the customer. Information is important, not only in helping to achieve planning, production management and control functions, but also to ensure the quality and safety of edible oil consumer. At the same time, the flow of information is also accompanied by risks, mainly due to the delay of information as well as information distortion and other causes.For a long time, There has been a risk on information flow of China’s edible oil supply chain, On the one hand, grasp of the market is not accurate, transfer cargo between the country’s factories, product promotion is not ideal, responsibility is difficult to divide, horizontal coordination more difficult, and distribution operations into a passive, these have yet to be resolved; on the other hand, genetically modified food oil and waste oil filled with the edible oil market, but the consumers do not know the real situation, food safety issues at stake.Object of this paper is the risk of edible oil supply chain information flow, combined with food safety, the analysis of domestic and foreign research status, and then introduce the concept of corresponding content. Then, gather relevant data through questionnaires and data integration, etc., to identify the key factors edible oil supply chain information flow risks:Firstly, a quantiative analysis was conducted by improved DEMATEL method to identify the degree of the combined effects, degree of being affected, causes and the center of the risk of supply chain information flow, which has targeted the preliminary identification of government regulation and control, modern information technology platform, supply chain length, etc. are key factors.Secondly, the establishment of evaluation index system of edible oil supply chain information flow, based on the key risk factors from the above process. Next, according to the index system, the use of ANP-BOCR method for further evaluation, then use examples to demonstrate the results. Finally, the future of edible oil supply chain information flow risk needs further improvement, raised the prospect.
