Research On The Quality Of The Wine Grape In Subregions Of Xinjiang

The berry quality of Vitis vinifera cv. Merlot, Cabernet Sauvignon, Chardonnay, Italian Riesling, Riesling cultivitaed from Yining, Shihezi, Manasi, Wujiaqu, Yanqi, Heshuo, Shanshan, Hami regions of Xinjiang Province were studied in 2014. The research mainly involved to ecological condition, basic quality index of grape, anthocyanins and non-anthocyanins content and aroma components. This study aims to realize the sustainable development of wine industry. The primary results were as follows:1. There is a big difference among the same grape variety from different areas. Most of them have a good maturity because of low acid. Based on Principal Component Analysis, the ranking of integrated quality of Cabernet Sauvignon from eight areas is Yining, Shihezi, Manasi, Heshuo, Hami, Yanqi, Wujiaqu, Shanshan; The ranking of integrated of Merlot from six areas is Yanqi, Shihezi, Yining, Wujiaqu, Heshuo, Shanshan; The ranking of integrated of Chardonnay from six areas is Yanqi, Shihezi, Yining, Wujiaqu, Heshuo, Shanshan.2. 9 types of anthocyanins were detected by HPLC, and the highest content of anthocyanins of Cabernet Sauvignon were Heshuo and Yanqi, which reach 15.645 and 15.929 mg/g. The highest content of anthocyanins of Merlot was Yining, while the Merlot from Shanshan has the lowest content. The most monomer was Mv, and acylated anthocyannins occupy the most content, and acetylated anthocyannins was more rhan courmaric acylated anthocyannins, except Shanshan. Based on Principal Component Analysis, the ranking of quality of anthocyanins of Cabernet Sauvignon from eight areas is Heshuo, Yanqi, Hami, Manasi, 67 Group, 141 Group, Wujiaqu, Shanshan. And the ranking of quality of anthocyanins of Merlot from six areas is 67 Group, Heshuo, Wujiaqu, 141 Group,Yanqi and Shanshan.3. 18 types of non-anthocyanins were detected by HPLC. The highest content area of Cabernet Sauvignon were Heshuo and Yining(2626.3and 2768.9mg/kg), which were significantly higher than other places. The non-anthocyanins content of Merlot of six regions were between 1244.1-1923.9mg/Kg, and from high to low order was Heshuo, Yanqi, Wujiaqu, Yining, Shihezi, Shanshan. The non-anthocyanins content of Chardonnay from six areas were lower than red varieties, and there were 17 kinds of non-anthocyanins(Benzoic Acid not detected), the content varied from 492.8 to 603.9mg/Kg. Salicylic acid is the most composition of all detected non-anthocyanins4. 26 types of aroma components were detected by GC-MS. the content of Cabernt Sauvignon was varied from 7601 to 13633μg/L, and from high to low order was Yining, Shanshan, Shihezi, Manasi, Hami, Yanqi, Heshuo. The content of Merlot was varied from 9179 to 12602μg/L, and from high to low order was Yining, Shanshan, Wujiaqu, Yanqi, Heshuo, Shihezi. The content of Chardonnay was varied from 6799 to 10062μg/L, and the differences among the Chardonnay of six areas mainly come from the content of Benzaldehyde、5-methylfurfura、linalool et al.5. 67 Group, Manasi County and Heshuo County are suitable for Cabernet Sauvignon, while Shanshan County shows no fitting for planting Cabernet Sauvignon; Merlot shows being suitable in 67 Group, not Shanshan County; Chardonnay will be better planted in Wujiaqu, 67 Group and Heshuo County, and Shanshan County, which is hottest in the search, is not suitable for planting white vine.
