The test takes 6 years Cabernet Sauvignon and Merlot as test materials and uses randomized block design. It takes "dragon" training system as contrast. It studies on the influence of organ development, fruit maturity, form of phenols of wine grapes, and the quality of wine in different canopy structure height treatments(0.9m,1.2m,1.5m) and different fruit part height treatments(0.4m, 0.5m,0.6m) in "厂(Chang) " training system. The results are as follows:1. The "厂(Chang) " 1.5m’s canopy structure height is the same with "dragon". Because the branches are staggered, so there are more ineffective leaves and shadowed fruits. The fruit maturity and the form of polyphenol substance of "dragon" are below "厂(Chang) " 1.5m. Even the total phenols, tannins, anthocyanins and flavonoids are below "厂(Chang) " 0.9m level.2. The increase of canopy structure height in "厂(Chang) " can help to improve chlorophyll content and fruit maturity. Cabernet Sauvignon and Merlot’s canopy structure height 1.5m treatment increase the content of chlorophyll and reducing sugar, and total acid content is the lowest. The polyphenol accumulation is positively associated with fruit maturity. Compared with canopy structure height 0.9m treatment, total phenols, tannins, anthocyanins and flavonoids content of canopy structure height 1.2m and 1.5m treatments have a significant improvement. Influences of canopy structure height on total phenols, tannins, anthocyanins and flavonoids content in Cabernet Sauvignon wine have a significant difference, which manifests as 1.5m>1.2m>0.9m.3. Because of the effect of latent heat on the ground in "厂(Chang) ", different fruit part height leads to a difference in fruit temperature, it influence the fruit maturity and the content of polyphenol substance. Compared with fruit part height 0.5m and 0.6m treatments, reducing sugar content is improved and total acid content is lowered significantly in fruit part height 0.4m treatment. Total phenols, tannins, anthocyanins and flavonoids content can be showed as fruit part height 0.6m>0.5m >0.4m. Every treatment has obvious difference in total phenols, anthocyanins and flavonoids content. There is no difference on tannins content in fruit part height 0.5m and 0.6m treatments.
