In this experiment, under the conditions of the mechanical buried was not under the frame,11-year-old "Cabernet Gernischet" wine grape is used as experiment material to investigate the effect of four kinds of shaping methods including Goblet shaping (Claw type)、Single-line inverted L type、Single-line inverted L+erect branches and Double-row inverted L type on the physiology and fruit quality of wine grapes, intensity of photosynthesis on grape leaves、total acid、total soluble sugar、pigment and tannin in four special shaping conditions are measured. The results showed that:1、Under Single-line inverted L type shaping condition, content of sugar (sucrose, starch) in grape leaves is the highest, while the net content of water potential and net photosynthesis rate is also the highest under this conditions, single berry weight and total soluble sugar content has more advantage.2、Under Double-row inverted L type shaping condition, total soluble sugar and content of reducing sugar in grape leaves is the highest, meanwhile, content of total acid、grape skin tannin、seed tannin and grape pigment is the highest, and the difference is significant.3、Under Single-line inverted L+erect branches condition, content of lesf nutrient is the lowest; as to grape berry, content of grape skin tannin and seed tannin has more advantage.4、Under Goblet shaping (Claw type) condition, content of relative conductivity and MDA of its annual branches is higher, while the fruit quality is the worst in four orthopedic conditions.In general, Single inverted L type and Double-row inverted L type can be a good way to growth in buried was not under the frame conditions, this not only saves cost, but also greatly enhance fruit quality of grape berry and cold resistance of branches, the oretical basis and operability is stronger in this new cultivation.
