For the screening of wheat seedlings with high nutrition and high antioxidant value, determine the best mowing time, provide a reference for the further development of health care products Wheat grass.Different varieties of wheat seedlings were used in this experiment, comparative analysis of physical, physiological and biochemical indices of their leaves, make correlation analysis to these substances; Reasearch nutrients and anti-oxidation ability index differences in the tillering stage, turning green, jointing stage of Wheat grass;The relationship Wheat grass nutrients and antioxidant index and wheat grass varieties, among growth stages was evaluated to determine the optimal harvest of wheat grass.The main experimental results are as follows:1. The protein, flavonoids, chlorogenic acid, vitamin C, and other nutrient content, and antioxidant capacity were high in the 20 different varieties of Wheat grass. The chlorogenic acid content of Wheat grass reaches up to 4.77 mg ? g-1, higher than the general content of chlorogenic acid in the general honeysuckle.2.Physical indicators(leaf length, leaf width, fresh weight, dry weight, water content) and physiological and biochemical parameters(SPAD value, crude protein content, crude fat content, total ash content, flavonoid content, Vc content, chlorogenic acid content, SOD vitality value, total antioxidant capacity value) were compared among the 20 different varieties of Wheat grass, 7 production of varieties of Wheat grass were selected and obtain the ideal order of varieties 08038-2-8-3-4> Yu Mai 1- 3-2-2> Zheng jiaohui 33> 452> jade wheat 1-3-1-3> 08225-1-7-3> 2013216.3. When combined with principal component analysis to the shape and appearance of Wheat grass production of screening criteria, varieties 08038-2-8-3-4, jade wheat 1-3-2-2,09123-5-2-15 should be utilized; When use high nutrition, high chlorogenic acid content to be as screening criteria of Wheat grass production, the variety 33 Zheng jiaohui should be utilized; When use the high nutrients content, low fat content, high antioxidant capacity to be as screening criteria of Wheat grass production, the variety 452 should be utilized.4. Use 2013164,452,2013216 Zheng jiaohui 33 and 09123-5-2-15 as materials, determine the crude protein, crude fat, total ash content, vitamin C content of Wheat grass in the tillering stage, turning green, jointing stage. The four indicators increased with the passage of time the growth was firstly increased and then decreased, and the content in reviving is the highest. In turning green stage, the Zheng jiaohui 33 is the highest in crude protein content, the 09123-5-2-15 is the highest in crude fat content, the 2013164 is the highest total ash content, the Zheng jiaohui 33 is the highest content of vitamin C were showed in the experiment.5. Use 2013164,452,2013216 Zheng jiaohui 33 and 09123-5-2-15 as materials,determine the total flavonoids, SOD vitality value, chlorogenic acid and total antioxidant capacity of Wheat grass in the tillering stage, turning green, jointing stage.The content of flavonoids, chlorogenic acid content, SOD vitality value, anti-oxidation ability value was the highest in the turning green stage. The flavonoids, chlorogenic acid, SOD vitality value, anti-oxidation ability value 09123-5-2-15 are all highest,and they are 5.36 mg ? g-1,4.77 mg ? g-1,245.35 units ? g- 1,149.28 units ? g-1 in the turning green stage.
