Vegetables is the basic food to meet the people’s need of balanced nutrition and healthy diet food.vegetables’safety is a major problem in the people’s life. Due to the speciality of fresh vegetables,vegetables are highly susceptible to environmental quality and safety of its producing area, and agricultural inputs. Especially,with the development of social economy, the speeding up of agricultural modernization, modern industrial "three wastes" emissions and chemicals are discharged into the environment and contaminate the agricultural inputs, causing incidents in vegetable quality and safety, which make the vegetable quality and safety issues become a worldwide problem. While the existence of vegetables quality safety risk will not only damage the interests of consumers, but also affect the stability and development of vegetable industry. Therefore, research of vegetable quality and safety risk assessment has important theoretical and practical significance.On the analysis of the present situation of vegetables quality safety risk research at home and abroad, according to the characteristics of vegetable quality safety, good agricultural practices (GAP), theory of risk identification, make the risk analysis of vegetable quality and safety. Determine the cause of the vegetable quality and safety risk and its influencing factors, analyzes the performance characteristics of vegetable quality and safety risk, Make sure about that the growing part is the focus of vegetable quality and safety risk. On this basis, the combination of qualitative and quantitative methods, from four aspects:the vegetable producing area environment, agricultural inputs, quality inspection, the government guarantee, built a risk indexes of vegetables quality safety risk evaluation index system which composed of13security, after that the features of its risk criteria are given. Based on Logistic regression model, establish a discrete choice of vegetables quality safety risk assessment model,compare the index system of the collected information with the control criteria, translate the information content into the original data. Disposing the index data, using the statistical analysis and feature extraction, translate the data into a risk grade, which analysis results are obtained.Take heilongjiang province as an example,making the empirical research of vegetable quality and safety risk assessment, according to the results of empirical study, considering the present situation of heilongjiang province,risk control measures are put forward. Through the rational utilization of vegetable quality and safety risk factors,quality safety management and traceability system of vegetables, improve the vegetable quality management system and other measures, can effectively control the vegetable quality and safety risk.
