Research On The Generating Mechanism Of Food Quality And Safety Risk Under The Food Supply Chain And Its Control

Food quality and safety is people’s well-being which is urgent to improve in China.Due to the effect of food itself and production features, the management of food supply chain is different from the general industry and products supply chain,and the generating of quality safety risk and its control need further research.On the basis of the related research about food suppy chain,food quality and safety and food quality safety risk at home and abroad,this paper studies the generation mechanism of supply chain under the background of food quality safety risk and control of food quality safety risk.First of all,using literature analysis to identify the effecting factors of food quality safety risks under the background of supply chain and to sort them according to importance.This paper also uses Interpretative Structural Modeling(ISM),it puts forword the structural relationship model of risk factors under the background of supply chain.Furthermore,it puts forward the generating mechanism of food quality and safety on the food supply chain. For another,basing on the generating mechanism and the characteristics of food,this paper covers the control of the food quality and safety on the food supply chain,and divided into two parts:the control of the food quality and safety on the food supply chain itself,and the control of food quality and safety risk of the related subjects on the supply chain.The first part of the control of the food quality and safety on the food supply chain itself is based on the key factors discussed above,and then anlyze them to build the dynamic game model between manufacturers and consumers.The second part of the control of food quality and safety risk of the related subjects on the supply chain uses game analysis to analyze the related subjects in the dynamic game model,it concludes some suggestions and measures: strenthening government supervision,reducing the regulatory costs,strengthening the legalization of corporate social responsility and its self-discipline and enhancing the media public opinion.Basing on the generating mechanism of food quality and safety risk and the modeling analysis of food quality and safety risk,it provides theoretical basis and suggestions for food safety control,it is also a benefical attempt to solve the problem of food safety.
