China is still a high incidence of food quality and safety at risk, food quality and safety risk research has important practical significance. Firstly, from the perspective of the food supply chain, based on existing research and expert interviews, reviews the impact of food quality and safety risk factors in the perspective of system. On this basis, the use of technology to build the institutional model ISM risk factors. We divided the various aspects of the risk level and found sales of consumer link is systemic risk most likely to focus on the outbreak of the link. Secondly, the use of system dynamics, system dynamics model was constructed based on the food supply chain of food quality and safety risks. And God analyze the causal relationship between various aspects of risk within. By risk trends and overall trends difference variation compare various aspects of the discovery: food quality and safety risks mainly in the production and processing sectors; the effectiveness of food quality and safety risk control measures is an important factor in the risk of suppression. Finally, for the production and processing of food quality and safety risk, the risk-based control design costs and risks incidence of risk control model. Problem by the model into the knapsack problem, the use of genetic algorithms to solve design method. Examples prove that this method can be obtained quickly and effectively Pareto set, to get the best combination of control measures. This method can be used as an effective tool for companies to analyze risk costs and risk incidence.
