Dark tea is a unique tea in China which belongs to the six major tea of China. Dark tea belongs to the fermented tea, which the processing technology includes fixation, rub twists pile-fermentation, and drying. Dark tea have extensive pharmacological activities including antioxidation, lowering blooding lipids, and anti-atherosclerosis. In recent years, production of Anhua dark tea rapidly increased, and "Anhua dark tea" has been rated as a well-known trademark in China. Shortage of raw material, low level of technology, and lack of strict market supervision lead to uneven quality of Anhua dark tea on the market. The general tecknical demands and local standard of Anhua dark tea which released in the year of 2010 describe the clear technological and quality requirement for Anhua dark tea. The majority investigation of production quality and industrial development of Anhua dark tea have been done before 2010, and the investigation did not analyze the quality of different kinds of Anhua dark tea, therefore, it is necessary to investigate and analyze the quality and industrial situation of Anhua dark tea after 2010.The research progress of processing technology and health function of Anhua dark tea, history, and current situation of Anhua dark tea industry were first reviewed in the dissertation. "three kind of zhuan tea, three kind of jian tea, and one kind of hua juan tea" from 10 Anhua dark tea processing companies which randomly selected 68 companies with Anhua dark tea processing QS certification. The sensory quality and physicochemical index of local standard of Anhua dark tea were used as evaluation standard to investigate the present quality of Anhua dark tea. The results showed that the sensory evaluation and physicochemical index of fuzhuan dark tea from 10 Anhua dark tea processing companies reached the standard of "specially made", and the physicochemical index of fuzhuan dark tea were insignificant different between the 10 Anhua dark tea processing companies. The sensory evaluation of huazhuan dark tea from Anhua dark tea processing company B and C reached the standard of "specially made", and the physicochemical index of huazhuan dark tea were insignificant different between the 10 Anhua dark tea processing companies. The sensory evaluation and physicochemical index of heizhuan dark tea from 10 Anhua dark tea processing companies reached the standard of "commonly made", and the moisture content and ash content of heizhuan dark tea from company of A, B, C, E, G, and J were significant lower than the heizhuan dark tea from the last four company (P<0.05). The sensory evaluation and physicochemical index of tianjian, gongjian, shengjian, and huajuan dark tea from 10 Anhua dark tea processing companies reached the standard, and the physicochemical index were insignificant different between the 10 Anhua dark tea processing companies.The strengths, weaknesses, opportunities, and threats analysis of investigation of Anhua dark tea garden area, enterprise development, brand building, and marketing model between 2010 and 2014 indicated that further development of Anhua dark tea should seize the external opportunities, such as people’s awareness of health, government policies, and technological development to innovate science and technology, strengthen construction of dark tea garden, build the market supervision system, develop e-commerce, and promote tea culture tourism. Promotion of Anhua tea industry development should from all aspects, such as raw material, processing, and marketing.
