Grass-roots employees directly face to the customer, whose service is representative of the corporate culture and image to a large extent, and affect the overall evaluation of the customer to the enterprise. The service ability of employees in the first line is the critical factor to ensure the core competitiveness of the enterprise. Training is a kind of investment for the corporate, and an important way to train highly qualified staff and improve the core competitiveness of the enterprise. Talent training is the key to win victory in the competitive market. From the employee’s perspective, good training can motivate staff, inspire their potency, and enhance their responsibility,to create more value for the corporate. From the enterprise point of view, staff training can streamline workflow processes, improve the efficiency, take the shape of solidarity and cohesion, manifest corporate culture, and get corporate reputation to retain customers. China’s grass-roots staff training system of catering business is imperfect, the management fails to pay enough attentions to training, the quality level of junior staff is not optimistic. Therefore, how to conduct an effective training of the junior staff is a priority issue within the industry.In this paper, methods of field research, statistical analysis and so on were taken, and started based on the hierarchy of needs theory, human capital theory and the theory of learning organization. First, a brief overview of the current situation of S hotel staff training was made. The analysis of survey data found out the major problems among the hotel grass-roots staff training:training does not closely integrated with the hotel development strategy; the training content is imperfect; the training system is not standardized; training faculty are weak etc., and analyzed the causes of those problems. Later, combining the theoretical training and system model, an optimized vision to the S hotel training scheme was put forward from the angles of junior staff and Serving staff. In addition, measures to ensure the effective implementation of junior staff training scheme were put forward:an increased emphasis on training, good job analysis, job responsibilities clear, the establishment of specialized training institutions, hiring outstanding teacher training, and ensure the effective implementation of the training scheme through mental stimulation, physical incentives and other incentive mechanisms.
