In order to study the influence of different key temperature points on the quality indexes of flue-cured tobacco.Through the studies on varieties of flue-cured tobacco Yunyan 97 different process design,analysis of color and SPAD value in the process of natural yellow,the changes of color,SPAD value and water content in baking process,the appearance and inner quality of flue-cured tobacco.The main results are as follows:(1)In the course of natural yellowing,the lower leaf water loss is faster,the middle leaf is the second,and the upper leaf is the slowest.SPAD value was higher in lower leaf SPAD,the falling speed is faster than the middle and upper leaves,SPAD value of middle leaf was higher than that of upper leaf,the falling speed is faster than the upper leaf.In terms of L value,a* value,b* value and C* value,The L value,a*value,b* value and C* value of the upper leaves are the smallest at 72 h,the value of the lower leaf is the largest.(2)During the baking process,the upper leaves of Yunyan 97 varieties of leaf water reducing rules appeared from slow to fast,and then slowly declining trend.In the former 24 h,the overall decline rate of leaf water content was slower,from 24 h to 96 h,leaf water content showed a rapid decline trend,after 96 h,leaf water content decreased slowly and steadily.38? of treatment of the initial leaf moisture content decreased faster,at 72 h,the leaf water content decreased and the rate of decline began to slow down gradually.Leaf water content of the middle leaves showed a rapid decline in the overall pre metaphase,later leaf water content decreased slowly and tended to be stable in the state.Each processing in 0h~24h,the trend of leaf water content decreased relatively slowly,by 24h~84h,leaf water content began to decline rapidly,by 84h~156h,the decline rate of leaf water content decreased gradually,and tends to be stable and dry state.(3)During the baking process,the SPAD value of the upper leaves showed a decreasing trend,and at the end of 42?,SPAD value is 0.At the end of 38?,SPAD value was the largest for the control treatment,at the end of 40?,the SPAD value of each processing is small,all under 5.00,among them,the maximum value of SPAD is48?,and its value is 3.42.The SPAD value of the middle leaves showed a faster and more degradation before 40 ?,and the amount of degradation in the temperature range of 40~42?.The SPAD value is minimum at the end of 38?.At the end of40?,the SPAD value is smaller,and the SPAD value is 0.15.(4)Yunyan 97 species,upper leaf of L value size in baking process showing the whole first increased and remained relatively stable decrease trend.a* value of the overall performance of 40? before the increase of the trend,40 to 42?,the value changes small,then the a* value is further increased the size of the trend.The b*value is similar to the L value,in 40? before the end of the b* value increased,decreased at 40~42? temperature range,increased slightly after 42,48 and 54?showed a downward trend.The value of C* was increased at the end of the 40?,showing a decreasing trend at the end of 40 to 54 ?.The H* value shows 40 ?before the rapid decline in the trend,showing a slow decline at 40 ~42? temperature range,at 42 to 48? decreased rapidly,at 48 to 54? the upward trend.In the middle leaves,L value size changes showed a growth trend before 40?,at 40 to 42?,L value size change situation is different,in 42 to 48? before assumes the trend of escalation,48 to 54? between a downward trend.The a* value showed an increasing trend.The b* value of overall size showing a 40? showed increasing trend before,40 to 42? and declined,which T1 and T3 processing in 38 to 40? b*value decreased,42 to 48?,values had been increasing in size and in 48 to 54?decreased.The value of C* is shown as follows: before 40?,the C* value of each treatment is increasing,and the C* value decreases in the temperature range of 40~54?.H* value of the size of the overall performance of the downward trend.(5)The threee treatments of middle leaves of flue-cured tobacco comprehensive evaluation score were 48? and 54? respectively,and the scores were 156.16 and152.50.The three treatments of the upper leaf comprehensive evaluation score were38?,48? and respectively,and the scores were 163.20,149.20 and 143.20.Middle leaves of the high proportion of the upper and middle of a higher proportion of tobacco processing are 48?.The upper part of the upper leaves of the proportion of the upper and middle of the higher proportion of tobacco processing are 38?.(6)In the middle leaves of flue-cured tobacco,the chroma value index of the treatment are: 48 to extend,42?,54?,54? and 48?.In the upper leaves of the five color value index,the a* value of the treatment is 54?,and the rest of the color index value is 42?.(7)The total sugar content of flue-cured tobacco leaves was higher than that of the conventional chemical components of flue-cured tobacco leaves.In terms of reducing sugar,38? to extend the time,42? degree and 54? of the time to extend the processing,the reducing sugar content was in the range of reducing sugar content of high quality flue-cured tobacco.The sugar ratio was low,and the ratio of sugar to alkali was higher.In the upper leaves,in terms of total sugar content,38?,54? and the control of the total sugar content is high,at 42? and 48?,the reducing sugar content was moderate and the content was 19.80% and 20.01% respectively.38?prolonged treatment than two of sugar content and other processing are relatively high,42?,prolonged treatment is relatively low.(8)Tobacco sensory quality score,the middle leaf score was higher than the upper leaf score.The middle leaves in treatment on absorption higher total score is 48 degrees extension,a score of 70.77,with lower scores for 54? prolonged treatment,the score of 66.66,processing and processing of the difference score lower for 4.11.The upper leaves,on treatment were higher total score is 42?,the score is 65.58,with lower scores for the control treatment,the score was 63.43,with higher scores and treatment difference was lower for 2.15.
