Perfluorinated compounds(PFCs) are a class of organic fluorine compounds in which all hydrogen atoms attached to carbon atoms are replaced with fluorine atoms. PFCs have been widely applied in textile, aviation, metal plating, semiconductors, aqueous fire-fighting foams, and other industries because of their high thermal stability, high surface activity, hydrophobicity and lipophobicity. PFCs is one of the persistent organic pollutants(POPs). They have carcinogenicity, hepatotoxicity, and neurovirulence and reproduction toxicity. Diet is considered the main source of exposure to PFCs. In May 2009, the convention was held in Geneva, Switzerland. PFOS and related compounds have been listed into the Annex B of the Stockholm Convention on Persistent Organic Pollutions, and continue to attract scientific, political and regulatory interests. Currently, PFOS and related substances are still manufactured in relatively large quantities in china, thus the environmental pollution is increasingly serious. At present, most studies on PFCs focused on their contamination characteristics in water, atmosphere, blood, etc., with a little attention on meat, especially a nationwide investigation. In order to explore the concentrations of perfluorinated compound(PFCs) in chicken and mutton, the contamination characteristics and source apportionment, the health risk, We collected 1695 chicken and mutton samples which were collected in parts of main producing areas in China from August 2014 to December 2015 and detected the 19 kinds of perfluorochemicals(11 perfluorinatedcarboxylic acids and 8 perfluorinated sulfonic acid salts). All the samples were analyzed by high performance liquid chromatography-tandem mass spectrometry(HPLC-MS/MS) combined with solvent extraction solid filler purification. The main results obtained in this research are as follows:(1) Nineteen kinds of PFCs were detected in part of main chicken producing area, in which short- and medium-chain(C?10) were the main contamination. ?PFCs was 0.254 ?g/kg, The frequency of ?PFCs was 80.5%. PFPe A, PFOA and PFDA are dominant, and their average concentrations were 0.0864 ?g/kg, 0.0557 ?g/kg and 0.0182 ?g/kg, respectively. The total PFCs concentrations decreased in the order of Shaanxi > Guizhou > Fujian > Tianjin > Liaoning > Heilongjiang > Sichuan > Neimenggu > Shanghai > Guangdong > Guangxi > Yunnan > Jilin > Beijing > Jiangsu > Chongqing >Shandong > Hainan > Hebei > Qinghai = Xinjiang, ranging from 0 ~ 0.887 ?g/kg. Overall the coastal area are much greater than the interior area. The PFCs concentrations in chicken showed some difference in geographical. Furthermore, the results of health risk assessment showed that there was little immediate risk to human exposure from PFOS and PFOA via eating chicken in the above concerned areas.(2) Seventeen kinds of PFCs were detected in part of main mutton producing area, in which short- and medium-chain(C?10) were the main contamination. The frequency of ?PFCs was 97.6%, indicating more attention should be given on the PFCs of mutton. The average concentrations of ?PFCs in mutton is 0.476 ?g/kg, which was twice times of that in the chicken. PFHx A, PFPe A and PFPe S are dominant, and their average concentrations were 0.206 ?g/kg, 0.112 ?g/kg and 0.0480 ?g/kg, respectively. Among all the mutton samples, the highest ?PFCs was in Ningxia(0.707 ?g/kg) and the lowest in Shandong(0.172 ?g/kg). Furthermore, the results of health risk assessment showed that there was little immediate risk to human exposure from PFOS and PFOA via eating mutton in the above concerned areas.
