Since its rich nutrition and nice taste, dairy products is popular with the masses, and in recent years, the dairy industry has been rapid developed. However, with the deepening of the development of the dairy industry, dairy quality and safety problems are frequent outbreaks, the entire dairy industry has brought enormous destructive power. This paper selects the risks dairy items: thiocyanate, phenols environmental hormone(bisphenol A, bisphenol B, bisphenol F, 4- nonylphenol, 4-n- nonylphenol, octyl phenol) its sources and hazard-depth analysis of the currently used detection methods for optimization. Combined with HACCP Hazard Analysis Critical Control Point control technology, business processes dairy production is expected to do the monitoring, reduce business risk. The main contents and results are as follows:Firstly, ion chromatography detection method dairy thiocyanate. After the sample was treated with acetonitrile and precipitated protein, and the filtrate over Dionex On Guard?RP, purified, and then analysis by ion chromatograph. The method detection limits between liquid milk and powder were 0.1mg/kg and 0.4mg/kg, thiocyanate recoveries in the range of 80.7% ~ 106.6%, relative standard deviation days(RSD, n=6) in between 3.3% to 8.6% inter-day precision of 2.5% ~ 3.8% between. The actual sample analysis showed that: The method has good purifying effect, accurate, simple, quick, suitable for dairy products to quickly identify the content of thiocyanate and accurate quantitative analysis.Followed by high performance liquid chromatography- tandem mass spectrometry Dairy six phenolic environmental hormone simultaneously detected. The detection limit of the method is a bisphenol A(BPA) 0.15?g / kg, bisphenol B(BPB) 0.25?g / kg, Bisphenol F(BPF) 0.22?g / kg, 4-n- nonylphenol(4-n-NP) 0.10?g / kg, 4- nonylphenol(4-NP) 0.24?g / kg, octyl phenol(OP) 0.40?g / kg, the limit of quantification of BPA 0.51?g / kg, BPB 0.82?g / kg, BPF 0.75?g / kg, 4-n-NP 0.32?g / kg, 4-NP 0.81?g / kg, octyl phenol(OP) 1.34?g / kg; the average recoveries of milk samples at three spiked levels of low high school between 69.3% ~ 94.5%, and the average recovery of liquid milk in the range of 70.0% ~ 97.7%; milk powder and liquid milk in the precision of the method were 2.2%-4.3% 2.1%-4.4%.The method is simple, accurate, sensitive and rapid characteristics of six quantitative environmental hormone bisphenol A and other analytical testing applies to dairy products.Finally, a local liquid milk produced full-fat pasteurized milk process as an example, the use of HACCP management system, site surveys from a practical acceptance of raw materials and finished product testing and other aspects. The enterprise hazard analysis, the acceptance of raw materials and finished products inspection, the thiocyanate, bisphenol A, bisphenol B, bisphenol F, 4- nonylphenol, 4-n- nonylphenol, octyl phenol as risk indicators to control and finally the enterprises to avoid the risk of the product.
