Research Of Productive Crafts Technology About Alkaline Noodles(Hot Dry Noodle) And Design Of Key Device

As the saying goes,we rely on foods.With the rapid development of economy,the food industry is increasingly progress,especially noodles.Noodles industry has become a symbol of the whole food indust ry.In the Yangtze river basin in China,people used to add moderate alkali in noodles in order to improve taste.Now most of the production modes of alkaline noodles rely on small workshops.Although it conforms to the preference of food in handmade,the productivity is low.The fact that human costs are increasing restrict the development of it.Therefore,we must explore the way of automatic production on alkaline noodles.Alkaline noodles belongs to fresh wet noodles,the craft is complex and now most ly hand-made.Practices have shown that introducing imported automatic fresh wet noodles production line completely cannot make good performance.In this paper,we have done research about the craft technology that is suitable for automatic production of alkaline noodles and have designed the key devices of the key craft according to the craft by hands.First of all,we have formulated the craft route that is suitable for automatic production according to the craft by hands and have made overall arrangement of whole devices.Secondly,in this paper,we have focused on the key crafts of alkaline noodles: cutting and rolling,we have designed the suitable devices according to the craft route.Each module should have been designed in detail and optimized in structures.Finally,according to the device for drawing,processing and manufacturing spare parts,installation and debugging the device.Practice s have proved that the alkaline noodles production line that based on this research has the advantages of simple structure,high reliability,high production efficiency,high automation level and strong stability.
