Infant formula milk powder,which plays a very important role on baby's health development and balanced nutrition,is a special replacement of breast milk for baby's nutritional supplement.The shelf-life of finished product stored in cans full of nitro-gen or carbon dioxide is 24 monthes,while the shelf life of box-packed milk powder products is shorter,generally 18 monthes.The maintenance for nutrients in milk powder during shelf-life showed great influence on the product quality and normal alimentation for babies.The attenuation for nutrients during shelf-lif were mainly caused by oxygen,water,temperature and lights and so on.Nutrients under the same extraneous factor showed different attenuations.According to the relevant laws and regulations,the paragraph 1 of infant formula applies for 0-6 months old babies,while paragraph 2 infant formula applies for 6-12 months old babies.This article studied the attenuation of macronutrients,micronutri-ents and active ingredients of two kinds of baby milk powder.Highly-temperature acceleration test was used as the simulation of storeage of shelf-life.During the accel-eration test,samples were selected at regular intervals for the analyzing of all kinds of nutrients.According to the contents of every nutrient during the shelf life,the stabil-ity and attenuation rules of nutrients were obtained preliminarily.The study show the stability strength of each nutrients followed the rule as materials>fat>protein>water soluble vitamins>fat-soluble vitamins.For the fatty acids,the stabilities of DHA and AA were weaker than fat.Other optional nutrients showed no obvious rules?Vitamin C,which was as one of the water-soluble vitamins,was less stable than most of the fat-soluble vitamins.For the first time,the attenation rules of most nutrients in infant formula milk powder during the shelf-life were studied.The detection methods for each nutrient were comprehensively summarized.Together with the regulations of reinforcement amounts for the nutrients in infant formula milk powder,this article provided im-portant guidances for the receipt design?label vaule scope confirmation and compli-ance of new products development.Meanwhile,this article provides strong support for fluence analysis of nutrient,attenation data base establishment and formula calcula-tion for infant formula milk powders.It is helpful for products development and re-ceipt update keeping science and efficiency in the future.
