Mussels are not only one of the popular seafood products at home and abroad,but also the main economic shellfish in China.Half-shell mussels as the best-selling mussel products,the demand is increasing year after year.At present,the semi shell mussel is mainly obtained by hand,which processing efficiency is low and the processing environment is poor,and this can meet the market demand.On the basis of domestic and foreign bivalve shellfish shucking methods of research,this study proposes a new unilateral mussel shucking technology based on water jet technology.The optimum structure obtained by simulation parameters used nozzle,then a water jet unilateral shucking test mussels achieves the desired objectives unilateral shelling.Through the analysis and comparison of the advantages and disadvantages of the existing shucking methods,the feasibility of using water jetting and the mathematical model of water jet shucking are established.By analyzing and comparing the characteristics of different jets,we choose the type of jets used for mussel shucking as non submerged continuous jet.By analyzing and comparing the characteristics and shucking effects of different sector nozzles,we have determined that the type of nozzle used for mussel shucking is guided plate fan-shaped nozzles.First,The feasibility of shucking with water jets was determined and a mathematical model for water jet shucking was established.Comparing the characteristics of different jets,non-submerged continuous jets were selected for mussel shucking.The characteristics of different fan nozzles and the effect of shucking were compared to determine the nozzle type as the guided plate fan-shaped nozzles.Then,13 intra-nodal flow field models with different nozzle contraction angles,outlet diameters and cylinder lengths were established and meshed by using the ICEM-CFD software.FLUENT software was used to simulate each model to obtain the optimal nozzle structure parameters.The test verified the rationality of the obtained parameters.Finally,the optimal value of jet incident angle,target distance,and jet pressure affecting unilateral shucking of mussels was determined by theoretical calculations and experimental measurements.The fitting curves of the cross-section curves of shells in two directions of shell length and shell height were obtained to obtain minimum jet incident angle values.The influence of target distance and jet pressure on the shucking effect was demonstrated,and the best value was obtained through experiments.Shucking effect has achieved the desired goal by taking the best value of the three influencing factors for unilateral shucking test,.
