Acrylamide?AA?is produced during the processing of foods.AA is a class of human harmful substances that have neurotoxicity,reproductive and developmental toxicity,genotoxicity,and potential carcinogenicity.Therefore,it is necessary to establish a rapid and efficient detection method.Conventional methods for the detection of AA such as chromatography and mass spectrometry have the advantages of sensitivity and accuracy,but the sample preparation process is complex and cannot meet the needs of rapid AA detection.Electrochemical methods have the advantages of simplicity,rapidity,and ease of generalization.Glycopeptide?GSH?and hemoglobin?Hb?are able to generate an electrochemical signal by addition reaction with AA and are used in the electrochemical detection of AA,but their application is limited due to their low sensitivity.Magnetic Fe3O4 nanoparticles have good biocompatibility,and they have the function of electron conductive medium after they are covalently bound with biological macromolecules,and do not affect their biological activity when combined;carbon aerogels have a three-dimensional network pore structure.,Good conductivity is widely used in the field of electrochemistry;this paper combines the characteristics of GSH,Hb,Fe3O4MNPs,carbon aerogels,prepared GSH and Hb sensors for the electrochemical detection of AA,the specific content is as follows:1.Construction of Nafion/Hb-Fe3O4MNPs/GCE sensors.Fe3O4MNPs were prepared and used as the Hb immobilization material to construct the Hb sensor.The morphology of Fe3O4MNPs was characterized.The results showed that the Fe3O4MNPs were uniformly around 50nm.The experimental parameters affecting the electrochemical signal of the sensor were optimized.When the Hb loading was40?g and Nafion was 1?L,the response signal of the sensor was the most.Well,it reached 10.14?A;the addition reaction conditions of Hb and AA were optimized,and the best reaction time was 9 min.The electrochemical behavior of AA on Nafion/Hb-Fe3O4MNPs/GCE electrode was studied.In the range of1.0×10-61.0×10-4mol/L,the negative logarithm of?Ip and AA concentrations showed a good linear correlation.The limit of release is 8.95×10-7mol/L.2.It was found that due to the long reaction time between the addition of Hb and AA,the removal of the modified material will affect the accuracy of the experiment,and the Hb will easily cause the passivation of the click,and the rapid detection of AA will not be used.The Nafion/GSH-Fe3O4MNPs/GCE sensors were constructed based on the adsorption principle of Fe3O4MNPs and GSH.Cyclic voltammetry was used to characterize the different electrodes.The optimized parameters showed that when the GSH loading was 100?g and the pH was 4.5,the sensor signal response was the best at 2.478?A.By optimizing the addition reaction time,1 min is the best detection time,which is more suitable for the rapid detection of AA than the Hb sensor.Under the optimal experimental conditions,the relationship between AA concentration and?Ip was studied.When the AA concentration was in the range of 1.0×10-7mol/L to1.0×10-5mol/L,the negative logarithm of?Ip and AA concentrations showed good results.For the linear relationship,the linear equation is Y=-0.299X+2.699?R2=0.997?and the detection limit is 6.41×10-8mol/L.3.Carbon aerogel has a large specific surface area,can increase the conductivity of the electrode,in order to further improve the detection effect of the sensor,the experimentalintroductionofcarbonaerogelnanomaterialsprepared Nafion/GSH-Fe3O4MNPs/carbon aerogel/GCE sensor.The loading of GSH and the modification amount of carbon aerogel were optimized.When the modification amount of carbon aerogel was 4?L and the loading method was Nafion/GSH-Fe3O4MNPs/carbon aerogel/GCE,the response signal of the sensor was the best.Up to 101.0?A.The temperature of the addition reaction was optimized.When the reaction temperature was 35°C,the detection effect was the best.Detection of AA using Nafion/GSH-Fe3O4MNPs/carbon aerogel/GCE sensor when AA concentration is 1.0×10-8 to 5.0×10-7mol/L and 1.0×10-10 to 1.0×10-8mol/L In the range,the negative logarithm of?Ip and AA concentration showed a good linear relationship,and the detection limit was 8.87×10-11mol/L.
