| The sub-health status of white-collar in first-tier cities is increasingly serious,long-term improper eating habits lead to nutrition imbalance is one of the main factors,and the lunch problem is the most serious.In view of the problem that white-collar’s lunch is not nutritious,this topic investigated the problems of nutrition knowledge,attitude and experience of existing lunch service systems from the point of view of service design.Combined with the theory and method of service design,I analyzed the behavior and demand of white-collar workers,and finally put forward the design strategy of how to construct the nutritional lunch service system,construct nutrition consensus and form the nutrition diet habits for white-collar in first-tier cities,to enhance the efficiency and quality of restaurant service,Nutrition awareness and encourage white-collar workers to develop a nutritional diet habits.By meeting the needs of multiple stakeholders,enhance the enthusiasm of change,it can prompt all the stakeholders to meet the challenges of food and health crisis with a new look.In this paper,firstly,the present research situation of nutritious lunch,the definition of nutritious lunch and the existing nutritional intervention model were analyzed,and the method of service design was used to analyze the service process,touchpoint and stakeholders of the existing lunch pattern-self-prepared,dine in company canteens,dine in restaurant,takeaway.Combined with excellent examples of nutrition diet at home and abroad,I derived service location include six parts— Sustainability of business community,open and inclusive system,multi-partner community,data intelligence technology,people-oriented experience,the profession of management and operation and design orientation include three parts—Take the initiative of nutrition,experience during service process,nutrition habits.And also put forward the focus point when service design involved in nutritious lunch for white-collar in first-tier cities.In the next stage,I made a preliminary study on the behavior and environment of CBD in Shanghai,and summed up the five aspects of white-collar workers’ knowledge,attitude,action experience and dietary habits about nutrition lunch.And then deeply interviewed white-collar workers and staffs of restaurants in Beijing,Shanghai,Guangzhou,Shenzhen about the above five aspects.After that,based on the user behavior analysis,I classified the white-collar workers into types —convenience,economic,enjoyment,restraint,emotional,and summarized the needs of them,and then summed up the corresponding function points of nutrition lunch service.In the last part,firstly,I put forward the design principles of function,experience and value of the nutritious lunch service system for white-collar workers in first-tier cities,and then,design strategy of service system was proposed from four aspects: meaning,system,content andevaluation.Secondly,I raised that nutrition consensus of multi-stakeholders can be formed by means of nutrition education,participatory supervision system,trust mechanism and user enlightenment.In addition,I founded the four stages "cognition-action-habit-influence" to form the nutritional habit,and then came up with the design intervention strategy of each stage.Finally,based on the design strategy of service system,nutrition consensus,habits forming,I made some concepts for the nutritious lunch service for white-collar workers in first-tier cities,just to verify and reflect the proposed strategy. |
