Lipoxygenase is the source of soybean flavor,it is involved in the oxidation of polyunsaturated fatty acids in the seed to form hexenal,alcohols,ketones,and other small molecules with stench,7S globulin is the major allergenic protein in soybean,therefore,lipoxygenase and 7S globulin are removed as much as possible in the process of deep processing of soybean products.In this study,SI0162 with lipoxygenase(Lox-1,2,3)completely deficiency was used as the female parent,and 1003-44 with ??-?-?-subunit completely deficiency was used as male parent,cultivated soybean lines with lipoxygenase and 7S globulin subunit double null characteristics,and screened soybean germplasm with double null characteristics quickly,efficiently and accurately by ISDSPAGE(Improvement-Sodium Dodecyl Sulfate Polyacrylamide Gel Electrophoresis)double null synchronization detection method,and then through the continuous addition and single plant tracing detection,finally,ten soybean germplasm resources with stable genetic traits,lipoxygenase and 7S globulin subunit double null characteristics were created.In this study,the relative quality traits and agronomic traits of the experimental materials and main cultivar of Heihe 38(control)in Heilongjiang Province were measured by a series of physical and chemical experiments.The experimental data were analyzed and compared to explore the differences between experimental materials and control variety of relative quality traits and agronomic traits,define the effects of lipoxygenase and 7S globulin subunit double null characteristics on soybean seeds,and identify the quality and value of lipoxygenase and 7S globulin subunit double null germplasm resources.The experimental results show that:the obtained experimental materials have obvious advantages in processing characteristics,the fat content is slightly higher than control variety,protein content has no outstanding advantages,but oleic acid and sulfur-containing amino acids and other beneficial ingredients of human health significantly increased,some of the experimental material in the water-soluble protein content has a comparative advantage,the changes in these indicators meet the objectives of innovative breeding,which can provide theoretical basis and basic materials for the breeding of special high valueadded soybean varieties for food processing.Finally,the following conclusions are drawn from this study:(1)There was no significant difference between the main quality traits of the experimental materials,and the coefficient of variation was less than 10%(weak variation),indicating that there was no large genetic difference between the experimental materials,and with a similar genetic background.(2)The protein content of each experimental material is 39.61% by Kjeldahl Nitrogen Determination,which is basically same as control variety.It was founded that the water-soluble protein content of 7005 and 7010 were higher than control variety by measuring the water-soluble protein content of the experimental materials,have a comparative advantage.(3)The average fat content of the experimental material is 22.06% by Soxhlet Extraction,which is 0.83% higher than control variety.(4)The content of fatty acids in the experimental and control varieties was determined by gas chromatograph,it was founded that the content of oleic acid in the experimental material is 4.3% higher than control variety,and the content of palmitic acid and linoleic acid was slightly lower than control variety,and the content of stearic acid and linolenic acid same as control variety.(5)The amino acid content of the experimental material and the control variety were determined by amino acid analyzer,the result showed that the total content of sulfuric acid in the experimental material is 1.45% and the control variety is 1.18%,which is 25.0% lower than that of the former.(6)In addition,observed the growth of experimental materials through the plot experiment and pot experiment,it was founded that the experimental material were growing normally,the growth period is 142 days,the plant height is about 110.00 cm,and the other agronomic traits were normal by studying the agronomic traits of the experimental materials.
