The experiment selected Dorset lambs and F1 generation with the binary hybrid of Han and Dorset sheep as experiment animals so as to determine the differences between the physiological and biochemical test,meat performance and meat quality.This test divided into two stages,the first stage is to study physiological and biochemical indexes and meat performance,the second stage includes the research of meat quality.The experimental results that:(1)Physiological and biochemical indexes and meat performance: According to the results of routine blood,red blood cell volume on average of Dorset lamp has significant differences in addition to the binary hybrid lamb,other indicators have no significant differences.The blood biochemical results showed that the binary hybrid lambs alkaline phosphatase,total protein,albumin and corresponding index of Dorset sheep have significant differences.Under the condition of the same breeding,the slaughter weight of binary hybrid lamb with 6 months is higher than Dorset sheep by more than 2%(P>0.05),and the slaughter rate is higher more than 3.32%(P>0.05),The eye muscle area of binary hybrid lamb with 6 months is 6.07%,higher than Dorset sheep(P<0.05).(2)Meat quality:Regular testing results showed that the meat color of hybrid lamb is between 3 to 4 points,which belongs to the normal color,The binary hybrid lamb on a verage is 3.42 points,the color is slightly deep;Specimens pH value is 5.64,accord with standard of meat;Cooked meat rate of binary hybrid lamb is 55.56%,57.18%,respectively,and the Dorset lamb is 54.92% and 57.87% with no significant differences(P>0.05);The shear force of binary hybrid lamb on average is 6.75 N,7.47 N.From the growth performance,meat performance and meat quality of all the determination results in binary hybrid lamb,it proved that the binary hybrid lamb compared with Dorset sheep meat quality showed better heterosis,and on the edible quality,dual hybrid slightly better than Dorset lamb,which has an important guiding role in practical production.Meet the wide river region in Gansu province for the development of sheep industry,make full use of local varieties and improve the economic benefit and so on,which plays an important role.
