Aralia elata is a kind of Araliaceae Aralia plant,its sprout is used as edible wild vegetables,which is rich in phenols,saponins,polysaccharides,flavonoids and essential oil,etc.The sprout can treat rheumatoid arthritis,diabetes,chronic gastritis,hepatitis and ischemia myocardial and some other diseases.(1)The results of nutrient analysis of edible A.elata showed that the contents of the ash were from 8.76% to 10.35%.The sample 7 has the highest contents,and the sample 8 has the lowest.The highest crude fiber content was sample 4,up to 11.07%,significantly higher than other samples.On the other hand,the lowest crude fiber content was recorded in sample 3 and 6,which were 5.38% and 5.43%,respectively.In addition,the highest crude polysaccharide content was in sample 5 and the lowest content was in sample 2.In order to analyze the chemical constituents and evaluate the nutritional qua lity of edible A.elata,eight different habitats of A.elata sprouts were chosen as the raw materials,numbered 1-Benxi,Liaoning,2-Linjiang,Jilin,3-Pingwu,Sichuan,4-Enshi,Hubei,5-Changbaishan,Jilin,6-Shangzhi,Heilongjiang,7-xiaoxinganling,Heilongjiang and 8 local market(Harbin,Heilongjiang).The contents of nutrients(ash,crude fiber and crude polysaccharide),phenols and their antioxidants capacity,total flavonoids,total saponins,mineral elements and essential oil were determined.Finally,mathematical statistics method was used to analyze the components and the quality evaluation and then compared the eight different habitats of A.elata.The main results can be summarized as follows:??(2)The analysis of phenolic content and antioxidant capacity of edible A.elata showed that There was no significant difference among other samples.quercetin was detected as the major constituent,espically in sample 4(11.7 mg/g).Gallic acid was higher in samples 1,2,5,6,7,and 8.However,in samples 3 and 4 were not detected.In addition,the content of the protocatechuic acid were higher in samples 1,2,3,4 and 8.The highest total amount of phenolic compounds in sample 4 was 14.55 mg/g.There was significant difference with other samples,and the lowest content was 2.86 mg/g in sample 6.In the DPPH test,radical scavenging capacity(3)in sample 3 extract was the highest,in sample 6 extract was the lowest.In the ABTS assay,the inhibition rate in sample 3 extract was the highest and the lowest in sample 4.The content of total flavonoids of edible A.elata showed that the highest content(4)was 48.63 mg/g in sample 4,but the sample 2 was only 4.06 mg/g.On the other hand,the content of total saponin in sample 3 was higher than other samples(27.85 mg/g),the lower content was recorded in samples 5 and 7,13.96 mg/g and 13.62 mg/g,respectively.The content of mineral elements of edible A.elata showed that there were some differences in all the 9 main mineral elements.The content of Fe in the sample 2 were higher,Mg?Mn?Co?Ni were higher in sample 4,Cu and Fe content were significantly higher in sample 5 than other samples.The sample 7 had high content of Zn?Fe?Ni,and Ca?Mg?Sr were detected in sample(5)The analysis of 8 higher than other samples.essential oil content results of edible A.elata showed that 151 compounds were identified in the 8 samples.The major compounds detected in the essential oils were ?-cadinol,?-copaene,(-)-alloisolongifolenepuriss and n-hexadecanoic acid,espically in samples 1,2,3,5,6 and 7.The content of ?-cadinol in sample 7 significantly higher than other samples was 17.05%,?-copaene was found to be the highest in sample 6 up to 23.08%.In contrast,there was no significant difference in the 6 sample of(-)-alloisolongifolenepuriss and n-hexadecanoic acid.In sample 4 was dominated by nerolidol and 9-octadecenamide,(Z)-.In addition,the content of(6)In order to ?-cadinol,(-)-alloisolongifolenepuriss,bicycle [7.2.0] undec-4-ene,4,11,11-trimethyl-8-methylene-and 9-octadecenamide,(Z)-were higher in sample 8.evaluate the quality of edible A.elata,multivariate statistics methods of principal component analysis were used for analyzing the eight different habitats,including nutrients(ash,crude fiber and crude polysaccharide),phenols and their antioxidants capacity,total flavonoids,total saponins,mineral elements(Ca?Mg?Zn?Cu?Fe?Co?Mn?Ni?Sr)and some volatile components,etc.Finally,the comprehensive score in each sample of edible A.elata was obtained,the order was sample 4?sample 7?sample 5?sample 3?sample 6?sample 2?sample 1?sample 8.The highest score was 0.486 in the sample 4,followed by sample 7 was 0.482,but sample 8 scored the lowest was 0.098.
