The development and research about ancient Chinese food are serious mismatch.For specific performance,one hand,there is a rich and colorful food culture;on the other hand,the record on food culture is little.In 1368,Zhu yuanzhang built Ming dynasty,Nanjing was the capital of Ming dynasty.It is also one of the representative areas to study food culture in Ming dynasty.In early Ming dynasty,many things waiting to be done,folk foods are very simple.With the development of economy,there has been a rapid development and progress in the food raw Material,storage methods,main dishes,snacks and so on.The prosperity and development of diet culture is also reflected the prosperous of the society in Ming dynasty from one side.For the steady development of late in Ming dynasty,the folk food culture at the same time appeared a few new atmosphere: firstly,is such as the introduction of new crops such as corn,potatoes,peppers,has injected new vitality for Chinese cuisine;secondly,accompanying with the development of commodity economy,the capitalist sprout emerged,catering industry also began to rise;thirdly,it's the change of eating customs,mainly reflected in two aspects,one is from to advocate industry and thrift to the pursuit of luxury,the other is from filling to preserve one's health.The three changes were based on the great prosperity of material civilization,it can be said to be a variety of Maslow's Hierarchy of Needs.Refinement to Nanjing folk diet,it also fully reflected the above.The root cause why the folk diet was prosperous in Ming Dynasty lies in the development of the economy.Bud of capitalism in China appeared,the development of commodity economy made society over-commercialized,rich material provided varied diet for people;The establishment of former capitals offered protection for the meaning of diet culture in rich talent.These two conditions prompted a part of the Scholar-officials pay more attention to the civilians' living conditions;Another part of the Scholar-officials seek pleasure,so the luxury culture spread in the whole society.
