As the production and the consumption of pork in China have been on the top of the world so far,Safe meat "has become fashionable,Meat safety issues more and more attention by the government and consumers.Besides, to be a key link from pig to pork, the procedure of pig slaughtering has an important influence on the quality and safety of meat. This paper describes the traceability system of pig slaughtering. It can effectively realize the tracing management for the safety of meat products on the workshop of pig slaughtering.This paper has been divided into five chapters to get three problems researched. First,Meat quality and safety traceability system theoretical analysis.Specific studies to establish the mechanism of meat traceability system and technical support.The official also discussed Animal Information Management content,Combined with the actual situation of slaughterhouses in Nanchang,proposed slaughterhouse slaughtering link traceability system development goals.Second, the analysis based on traceability Perspective Nanchang meat product quality and safety management issues and causes. Detailed analysis of the main problems in Nanchang meat product quality and safety management and on the basis of analysis of its causes. Accordingly drawn: Quarantine Inspection lack of information, lack of information links slaughter, farming areas difficult to collect information is the key to produce meat product quality and safety management issues.third,The main aim of the simulate system is take the automatic identification technology, such as RFID and bar code, combined with slaughtering and processing enterprises, to real-time monitoring the entire process of pork production, and automatically and accurately capture the relevant information of the main production processes and health inspection and quarantine.Characteristics and innovation of this paper are as follows:From the official health supervision information management and enterprise information management of this new perspective, explore new ideas and new ways slaughterhouse slaughtering link traceability system construction.The method to establish organic links as link farming and slaughter traceability system links provide a new perspective.It can help government regulators to effectively monitor product quality and safety, and timely tracking, tracing the source of the products in question and provide the tools flows.
