Edible quality and safety need each node in the supply chain enterprises to jointly safeguard. However, some edible fungus production and processing enterprises in order to pursue their own interests using inferior raw materials and bacteria, and also using relatively backward production and processing equipment and technology, the level of logistics is low, Edible fungus quality and safety risk may occur at any time, The risk of the quality and safety of edible fungi is not only harmful to the vital interests of consumers, but also can prevent the development of China's edible fungus industry. In the process of production and processing of edible fungus, how to prevent the risk of edible fungus quality and safety is the key point to ensure the quality and safety of edible fungi.Under the premise of analyzing the current situation of agricultural products risk research at home and abroad, analyzing the risk factors for the quality and safety of edible fungi with supplies chain theory, risk management theory, HACCP and GAP, finding out the edible fungus quality safety risk that includes production risk, process risk, logistic risk, marketing risk, establishing index system, and through interviews and membership degree analysis to screen indexes, the final edible quality and safety risk evaluation index system is established.
