Vegetables are considered as one of the main types of food products for Mongolians. The history of vegetable consumption is relatively short starting from socialist system, but now it's one of the largely consumed products after the meat and meat products, flour products, milk and dairy products.It's essential for any country to provide healthy and safe vegetables and food products, since it relates to the health and long-aging of their population. Therefore vegetables are considered as the most important product for consumers because it offers different vitamins and minerals, and rich diversity of micro-nutrients. Mongolia is also putting great considerations on how to provide healthy vegetables for the public and taking this matter in the state policy level.Furthermore, the vegetable sector plays few important roles such as ensuring the supply of raw materials for public food and catering services industry, promotes the economic growth of food and service industry as well as supplying healthy and safe food for the population.In 2013 there were total of 1180.8 thousand hectares of arable land in the country. The 2014 Mongolia harvested total of 448.1 thousand tons of grain, of which 437.9 thousand tons of wheat,199.2 thousand tons of potato,105.2 thousand tons of vegetables and 4.5 thousand tons of barley and 4.3 thousand tons of oats and 624 tons rye, triangle 568 tonnes of rice and 4.5 tons of oil plants and 34.3 thousand tons of forage, the domestic harvest meets 100 percent of wheat and potatoes,62.6 percent of vegetable for the annual consumption.In 2014 Mongolia has prepared 318.0 thousand hectares of well quality fallow,98.9 were developed by downsizing technology, which was increased by 23.1 thousand from last year, and the total fallow has also been increased by 41.1 thousand hectares compared to last year. The exploitation working area has expanded to 618.5 thousand hectares when they added 34.3 thousand hectares from the abandoned and fallow land.Also in 2014, Mongolia have produced 2,400 tons of tomatoes and 4,400 tons of cucumbers domestically, and imported 2569 tons of tomatoes,1283 tons of cucumbers. As we can see from this example of tomato, Mongolia imports mostly from China and other countries more than producing the products domestically.Therefore we need to study and do detailed research on the development of this industry to supply the public by producing all the demand from local productions, in order to ensure people's food security.
