During the past several years, with the development of the society, the economy is in a healthy and steady growth in our country key stage, it also pushed forward the rapid development of the tertiary industry. Therefore, as the third pillar industry of the restaurant industry obtained the unprecedented development opportunity. But at present the phenomenon of high star hotel staff turnover is relatively serious; the star hotel poses a grave threat to the survival and development, but also affected the internal stability and long-term development of the enterprise.This paper first to domestic and foreign scholars to study star hotel staff turnover theory as the foundation, at the same time choose M hotel in Anhui province as the research object, through the research on human resources management theory knowledge, especially for the staff turnover theory and employee incentive mechanism makes a deep exploration. On this basis, from the work motivation, work enthusiasm, the promotion factors, management style and working stability of star hotel from different departments, different age and different cultural degree of employee loss reason of questionnaire survey. Then according to the actual data analysis results, it is concluded that M of the main causes of hotel staff loss, put forward a kind of accord with the characteristics of M hotel staff incentive mechanism, gives great importance to the salary incentive. Finally, gives the star hotel management system and the overall development strategy recommendations.
