With development of the society and fast pace of life, consumers' demand for chain restaurant increase day by day. For Chain Restaurant has standardized management process that followed by no matter raw material purchase or food processing and has realized reasonable centralization, easy to copy and manage, it has become one of the development directions of the catering industry. Food safety is an important evaluation and consideration fact in supply chain. How to select, evaluate and manage supplier's management model on food safety has an important reference value.This thesis starts on food safety management, analyze and discuss about the suppliers of Chain Restaurant's selection and evaluation, and build up a set of systematic and scientific supplier evaluation management system, which investigate how company choose suitable evaluation system in different scale and development stage based on food safety so as to control food safety risk in whole supply chain and help company to achieve competitive excellence. First,the thesis introduce supplier management, food safety and quality management related theory and comparatively study on famous domestic and foreign Chain Restaurant's supplier relative completely evaluation method.. Then, the thesis discuss Chain Restaurant supplier management strategy based on food safety. Last, the thesis analyzed how Chain Restaurant K manage its' supplier. In total, this thesis discussed different quality management model to upstream supplier under current China food safety situation, which has practical significance and also can provide certain reference value to Chain Restaurants.
