Along with society's development and lifestyle changes,the development level of service industry impacts the social life more and more obviously.In 2016,the proportion of Chinese service industry accounts for 50%in the national economy for the first time,become the dominant force in the national economy,the public catering industry,as an important pillar industry,shows the growing momentum of development.Although there is a broad prospect,many enterprises of catering service industry are facing the challenges of the high cost and low profit,and in the changing competitive environment,the enterprises will face a new round of reshuffle,which is more fierce.Therefore,doing research to improve the efficiency of the operation and promote the healthy development is significant for catering services.In the field of theoretical research,Mass Customization has effectively solved the antinomy of the contradiction between efficiency and custom,by Modular and Postponement Strategy,enterprises obtain scale production without sacrificing personalized market demand.However,the practice of Mass Customization in services sector is not common,in conflict with the rapid development of service industry.Applying Mass Customization and Modular theory for service products can help to enrich its application range of the relevant theories and research level.In this paper,we analyze the historical literatures on Mass Customization,according to the characteristics of the catering service industry,the application feasibility and existing problems of Mass Customization in catering industry are pointed out,coming to the conclusion of Modular Strategy to adapt in the service industry development.In the process of specific analysis,separating the whole service process through front-back stage decoupling,using Modular for object modularity and process analysis in both the back food production process and the front desk service providing process respectively,using examples to discuss the service module configuration method,using SPSS software for Clustering analysis,building mapping structure of the customer demand,function modules and the physical module.Providing developing reference for catering enterprises to improve service system operation efficiency and improve customer satisfaction.
