BackgroundWith China's economic development and the improvement of people's living standard,the consumption of pastry which is one of the traditional food,is increasing rapidly.Pastry is becoming the popular food when you visit your friends and family.In recent years,food safety incidents have occurred frequently,pastry become one of the type of the food which consumer focus on.The difference of pastry not only from different company but also from assortment,production process,species.Generally speaking,FDA regulators supervise company by the way of testing the pastry's quality.Compere with paying more attention to quality.FDA regulators is less concerned about factors such as food-material,food-worker,production environment,food-machine,production process.ObjectivesThe overall situation of China's current food safety has been greatly improved,but there are also serious problems.From newspapers,radio or Internet,we can often get the information of food safety incidents and food safety violations.The purpose of the study is to guide the quality management to pay attention to the food's quality at the first step of production process.By checking every step of the production process,the quality management can find the true problem which-have bad influence to the production.For FDA regulators,these exposed issues are helpful for future regulatory work.Data resource and methodThe object of this research is pastry company which have gain the food production license.The expert design a check-table which basis on the national standards named 14881-2013 and has 39 check points.The check-table include key items,important items,normal items.The expert who come from specialist agencies will reference every item on check-table and began to exam company.They will subtract corresponding score when they find productive process cant observe the national standards.the full score are 100 points.In order to provide a fair,just and open environment for this evaluation,regulators invite reporters to videotape the entire inspection process.In addition,the social supervisor will follows the expert to evaluation.All the results will be published on the Internet.ResultsPastry company in Jinan as a whole is good.Compare with those which value of sales is low,the company which value of sales is high gain high score.Generally speaking,company which accord with ISO9001 gain high score.The situation of food additives being excessive use is still present.Conclusions and recommendationsThrough the evaluation,the quality management of pastry company pay more attention to the standardization of production process.Consumers get the true information about the current situation of food safety situation.For the company exposed problems,FDA regulators not only play the role of administration but also give the help about improve and advise.The standard system named IS09000 and the food safety management system named ISO22000 in increasing the quality of pastry have played a positive role.FDA regulators should supervise pastry company to establish food safety system which has the role of traceable.This traceable system has the following advantages:identifying the source of-problem food,narrowing the scope of the problem food,eliminating hazards and reducing losses.
