Utilization of byproducts is an important topic of current aquatic products processing, especially the discarded byproducts in abalone processing. In this study, the abalone viscera were used as experimental material to extract abalone oil by organic solvents and organic solvents combined with enzyme. The optimum extraction parameters were studied. The crude oil refining process of degumming, deacidification, bleaching and deodorization were investigated to determine sensory, physical and chemical indicators to identify the quality of oil.The fatty acids analysis of refined oil was obtained by GC/MS.This study provided an important theoretical basis, and made rational development and utilization of resources for abalone viscera.also It would also reduce environmental pollution. This study included:1.Single factor test and orthogonal optimization test were used to study the organic solvent extraction parameters of abalone organs oil.The analysis results showed that the highest oil extraction rate was 17.02%when the extraction time was 30 min, extraction temperature of 30 ?,extraction agent 90 mL,solid-liquid ratio 1:1.5 and the oscillation frequency of 250 beats/min.The organic solvent assisted enzymatic extraction of oil was also researched by single factor test and orthogonal optimization test. The analysis results showed that the extraction of oil rate reached the highest(18.44%)when the enzymatic solid-liquid ratio was 1:1,enzymatic temperature for 55 ?,enzyme dosage for 1.5%,hydrolysis time for 4 h and hydrolysis pH for 7.Finally,the optimum extraction process of abalone organs oil was determined by the improvement of extraction process and analysis of the oil component.2.It has been studied that crude oil contained large amounts of phospholipids, proteins, heavy metals, pigments and other impurities. The quality of crude oil and refined oil was measured by sensory indicators and physical and chemical indicators. The results indicated that oil sensory, physical and chemical indicators(including acid value, peroxide value and iodine value)all reached the prescribed level of refined fish oil requirements on SC/T 3502-2000 standard after refining treatment.3.GC/MS and NIST08.L mass spectrometry library search were used to analyze the fatty acids in the abalone organs oil.The results indicated that oil contained complete and high levels of fatty acids.Furthermore, there were 18 and 20 kinds of fatty acids on refined oil about before process improvement and after process improvement, respectively. And the relative amounts of arachidonic acid(AA)and eicosapentaenoic acid(EPA)were up to about 10%and 12%.A small amount of linoleic acid,y-linolenic acid,a-linolenic acid and docosahexaenoic acid(DPA)were also detected in the oil.The main polyunsaturated fatty acids(PUFA)were co-3 and(w-6,which were both essential polyunsaturated fatty acids.
