China is a vast country.There are differences in topography,economic level and cultural background of various regions.They have created different dietary characteristics for residents of different regions.On the basis of statistics of China Statistical Yearbook,China Health and Nutrition Survey and Chinese Famous Recipes,this study researches three aspects of dietary characteristics include various geographic division of food consumption patterns,the intake of nutrients and taste preferences and analyze the climatic,geographical and economic factors that affect the dietary characteristics of Chinese residents.The main methods are textual research,quantitative analysis,mathematical statistics and experiment.This research expects to lay a foundation for studying regional dietary characteristics and its influence factors.The main results are as follows:1?The food consumption pattern of urban and rural residents in china is divided into 8 categories.The provinces that share the same food consumption pattern have similar geographic locations.There are certain differences in the food consumption patterns in each region,but they are generally dominated by grain,supplemented by vegetables and mushroom.In most regions,pork is the main meat diet but pastoral residents eat more beef and mutton.2?Climate is the dominant factor that affects the overall characteristics of food consumption of urban and rural residents.Among them,urban residents' food consumption patterns are more affected by humidity,and rural residents' are more affected by the average temperature.The results of multiple linear regression analysis of influencing factors and food consumption show that grain consumption of urban residents is negatively correlated with average temperature and urbanization rate.There is a positive correlation between urban residents' pork consumption and average relative humidity.The consumption of grain of rural residents is positively correlated with altitude.The consumption of vegetable and mushroom in rural residents is negatively correlated with the average sunshine duration and positively correlated with the urbanization rate.There is a negative correlation between rural residents' pork consumption and per capita disposable income,and a positive correlation with average relative humidity,altitude,urbanization rate and per capita food consumption expenditure(P<0.05).3?The average daily intake of 6,364 adult residents in 12 provinces(municipality)in China is 253.34 g of carbohydrates,79.76 g of fat and 67.28 g of protein,and Their average energy supply ratios are 50.13%,35.51%,and 13.31%,respectively.There are significant differences in Carbohydrate,fat,and protein intakes among different province groups(P<0.05).The groups that have no significant difference are not similar geographically.4?In the multivariate regression model of macronutrient intake and its influencing factors,the factors that have significant influence on carbohydrate intake are urban and rural areas,province,gender,age,labor intensity and the number of meals out in three days.Province and the sex affect fat intake.Protein intake was significantly affected by province,gender,whether the Han nationality,education degree and income.Gender has the greatest influence on the intake of three macronutrient nutrients.In the logistic regression model of the rationality of the macronutrient energy supply ratio and its influencing factors,province,urban and rural areas and the number of meals out in three days have remarkable effects on the rationality of the three kind of macronutrient energy supply ratio.Age,labor intensity and education degree influence one or two kind of them.5?In the quantitative analysis of flavor characteristics of dishes in Chinese 17 provinces(municipalities),aquatic products accounted for the highest proportion in ten regions.Steaming,stir-frying and frying are most commonly used cooking methods in 24 kinds of methods.The province that uses the most seasoned spices per dish is Heilongjiang.Each dish uses 7.97 condiments.Salt,monosodium glutamate and soup condiments are widely used in various regions and the use of other condiments has its own characteristics.Tibet is the sweetest province and Henan is the most salty in sweet and salty maps.The pungency degree map has a distinct geographical area: southwest china has cuisine that is strongly pungent,and the intermediate pungent cuisine area includes the middle reaches of the Yangtze River,Shanxi,and Ningxia.The cold area in northeast china,Qinghai and Beijing is the area of light pungent cuisine.Eastern parts of china,Henan and Anhui belong to the light taste area.
