Development Of Edible And Medicinal Products Of Cordyceps Militaris

Cordyceps militaris is an important edible and medicinal fungi and the technique of artificial cultivation has become mature,however,the study on the deep processing and utilization of the fruiting body was comparatively little,especially in the improvement of the textures.In order to make full use of the nutritional characteristics and unique flavor of Cordyceps militaris,this article used hot water extraction technology based on the raw material of artificially cultured Cordyceps militaris fruiting body,moreover,taking the method of response surface analysis to determine the best extraction conditions and measure the content of the active substances.Cordyceps militaris-chip cookies and Cordyceps militaris-honey citron tea abounding with edible and medicinal functions and mellow taste were made by using extracted Cordyceps militaris powder.This study would provide the scientific evidence for the development and utilization of Cordyceps militaris.The major results are summarized as following:It showed that the optimum conditions of extracting were:water temperature was 75 ?,extracting time was 1.5 h,the ratio between material and solvent was 1:10,and repeated two times,the extracting rate was 38.3%.The active substances in the extract of Cordyceps militaris were as follows:cordycepic acid was 127.49 mg per gram,cordycepin was 4.82 mg per gram,cordyceps polysaccharides was 143.38 mg per gram,soluble protein was 854.67 mg per gram.Through single factor test and orthogonal test and the sensory evaluation was taken as the main standard,the optimum prescription of Cordyceps militaris-chip cookies could be determined;the additive amount of low-gluten flour was 55%,the additive amount of Cordyceps militaris extract powder was 2%,the additive amount of butter was 28%,the additive amount of white sugar was 9%,the additive amount of liquid whole egg was 3%,the additive amount of edible oil was 3%,water amount,baking temperature was 150? and baking time was 16 min.Through single factor test and orthogonal test for these four main factors affecting the Cordyceps militaris-honey pomelo tea and the sensory evaluation was taken as the main standard,the optimum prescription could be determined:the mixing proportion of peel and pulp was 1:2.5,the mixing proportion of fructose and honey was 2:1,the additive amount of white sugar was 14%,the additive amount of citric acid was 0.4%,the additive amount of Cordyceps militaris extract powder was 2%,the additive amount of thickener was 0.1%.
