The fruit that grows on mature quinoa ears is called unhusked quinoa,from which removing the shell becomes quinoa,and the quinoa rice is defined after removed the saponin layer.At present,quinoa rice on the market has high broken rice rate and saponin content,and has poor quality and taste.In order to find out the high rice rate and low saponin content,environment-friendly quinoa rice processing technology and rubbing and decreasing saponin processing parameters simultaneously.In this paper,the quinoa rice processing technology and the better parameters of the rubbing and soap reduction parameters are studied.The following issues are mainly studied:Select the size of quinoa from?1.7mm to?1.8mm as the test material,with grading-rubbing and decreasing saponin-rapid washing-drying(Process 1),grading-soaking-drying-rubbing and decreasing saponin-rapid washing-drying(Process 2).For the process,the rubbing speed,rubbing gap,and material gate opening are the experimental factors,and the rice rate,broken rice rate,and saponin content are used as evaluation indicators to determine the optimum process and the corresponding optimal parameters.The test results show that the process 1 has a rubbing speed of 2399r/min,a rubbing gap of 6mm,and a material opening of 15 mm.The rice output rate is 81.23%,the broken rice rate is 8.09%,and the saponin content is 1.104%.In the second process,the rubbing speed is 2399r/min,the rubbing gap is 8mm,and the opening rate is 10 mm,the rice output rate is 79.90%,the broken rice rate is 11.32%,and the saponin content is 0.915%.The rate of rice out of the local quinoa rice is 70%,and the broken rice rate is 13%;the average saponin content of the quinoa rice with the market survey and sampling is 1.041%,and comprehensive consideration is given to each index: the second process is the preferred process and the rice output rate increased by 9.9% and the saponin content decreased by 0.126%,which is an important reference value for the processing of quinoa.
