In recent years,various types of synthetic food pigments have been commonly added to daily foods,and the usage and dosage of food pigments has been strictly regulated.However,food safety problems still remains that seriously threatens the health of the human body.There are many kinds of artificially synthesized food pigments,and the detection environment is complex.Therefore,choosing an efficient detection method is of great significance for solving food safety problems.In this paper,three-dimensional fluorescence spectroscopy combined with a second-order correction algorithm is used to detect the concentration of four artificial food pigments and to achieve the quantitative analysis of food pigments.The main research contents are as follows:(1)Based on the principle of photoluminescence,the feasibility of fluorescent analysis for the detection of synthetic food pigments is analyzed.A steady-state spectrophotometer FS920 is used to measure four food pigments samples with different concentrations,and the relationship between fluorescence characteristic peaks,fluorescence intensities,and mixture mass concentrations is analyzed.(2)The fluorescence spectroscopy of four food pigments under the interference of two fruit juices and preservative are mersured.The theory and method of multivariate calibration and trilinear model are studied.And the components of food pigments multi-component mixing system are identified and predicted.(3)The three-dimensional fluorescence data of the mixed solution of potassium sorbate and amaranth are discriminated by the parallel factor algorithm.For the problem of the parallel factor algorithm being sensitive to the number of factors,it is proposed that the mixed solution of potassium sorbate and amaranth are discriminated by the alternative penalty trilinear decomposition algorithm.This algorithm brings better results and demonstrates the superiority than the parallel factor algorithm.(4)The penalty trilinear decomposition algorithm is used to discriminate between carmine and brilliant blue in grape juice and lemon yellow and carmine in orange juice.Itis proved that,in a certain concentration range,the alternative penalty trilinear decomposition algorithm combined with fluorescence spectroscopy could be used to realize the component identification and quantitative detection of food pigments for food additives in the mixed system.
